How do you feel about brunch? I love it! I am known to be a picky eater. I pick at this and I pick at that. A spoon of scrambled eggs all golden yellow and cradling rich yummy cheese in every nook and cranny. A sweet for sure. It should have cinnamon somewhere either inside or sprinkled on top.
Potato. Yes some kind of potato dish.

I’m starting off #BrunchWeek with a potato dish that’s cheesy and tummy pleasy.
Cheesy Hash Browns
These tasty patties turn shredded russet potatoes (I used Idaho® potatoes), Vidalia onions and creamy Cabot Cheese into a brunch time favorite.
Add some cheesy scrambled eggs, fresh berries and a beverage for a winning brunch idea! I used Cabot Tomato Basil Cheddar in my scrambled eggs. So creamy and delicious!
Ingredients
- 1 large russet potato skin on, shredded (about 2 cups)
- 1/4 cup grated Vidalia Onions
- 1 egg lightly beaten
- 1/4 cup hand shredded Cabot cheddar cheese (I used Cabot White Oak Cheddar)
- 2 tablespoons flour
- salt and pepper to taste
- oil to fry
Instructions
- Heat oil to 375 degrees.
- Place potatoes and shredded Vidalia Onions in a large bowl. Cover with water. Agitate to remove excess dirt and starch. Drain well and squeeze dry in paper towels.
- Return potatoes and Vidalia Onions to bowl. Add egg, cheese, salt and pepper. Add enough flour as needed to hold patties together. Form into 2-inch patties. Rest patties on wax paper until oil is hot.
- Fry approximately 2 minutes per side until golden brown and crispy outside yet tender inside.
- Drain on paper towels as needed.

About Vidalia Onions: Vidalia onions are unique to a very small region. In fact, they only grow within 20 counties in Georgia (which is also why they are the official state vegetable of Georgia)!
Vidalia onions were discovered back in 1930’s, and just like back then, they are still planted, transplanted and harvested entirely all by hand!
