I chose to crush the grounds a bit more. Easy to do by placing the grounds in a plastic resealable bag and rolling my rolling pin over the bag. This finer texture works well in baked goods but as is works just as well!
Sitting down with a mug of freshly brewed Door County Brownie Batter coffee and one of these brownies was a special treat. Of course I saved a bit of brewed coffee for the frosting, too.
Enjoy one (or maybe two 😉 ) of these brownies anytime of day.
Coffee Brownies
Coffee Brownies
Ingredients
- 1/2 cup butter
- 3 ounces unsweetened chocolate
- 2/3 cup flour
- 1/4 tsp baking soda
- 1 tsp ground coffee (I used Door County Brownie Batter coffee)
- 1 cup sugar
- 2 each eggs
- 1 tsp vanilla
- frosting
- 1 cup powdered sugar
- 2 tbsp vegetable shortening
- 2 tbsp brewed coffee, divided (I used Door County Brownie Batter coffee)
Instructions
- Preheat oven to 350 degrees. Melt butter and chocolate together over low heat. set aside to cool.
- Whisk together flour, baking soda and ground coffee. Set aside.
- Stir sugar into cooled chocolate. Blend in one egg at a time then vanilla. Fold wet ingredients into flour mixture.
- Pour into prepared 8x8-inch parchment lined and greased pan. Bake at 350 for about 20 to 25 minutes until an inserted toothpick comes out clean. Cool pan on wire rack before removing brownies.
- Mix together powdered sugar and shortening. Add coffee one tablespoon at a time to reach desired consistency. Frost cooled brownies.
