Coffee Jelly Roll #SpringSweetsWeek

I love making all kinds of jelly rolls. It’s fun to mix up the cake flavors and fillings. Of course the holiday standby is pumpkin roll with cream cheese filling.

Coffee is such a versatile medium to use in baked goods. So when I received all these flavors from Door County Coffee, I had to give one a try in a coffee roll. Coffee jelly sounded like the best filling.

I never tried making coffee flavored jelly. It took a few tries to get the consistency right. I think this combo of coffee sponge and coffee jelly works so well together!

Ingredients
  

  • jelly
  • 2 cups brewed coffee (I used Door County)
  • 1/3 cup sugar (I used Dixie Crystals)
  • 1 package unflavored gelatin
  • cake
  • 3 eggs
  • 1 cup sugar
  • 5 tablespoons black brewed coffee
  • 2 teaspoons vanilla
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions
 

  • Jelly: Whisk together coffee and sugar in a 1-quart saucepan. Mix in gelatin. Bring to a boil and whisk constantly to dissolve gelatin. Pour mixture in a bowl and refrigerate for several hours to overnight to fully set.
  • When ready to prepare cake, grease and flour a jelly roll pan. Beat eggs on medium speed until thick and lemony colored. Gradually add the sugar.
  • Mix in coffee and vanilla. Add flour, baking powder and salt.
  • Pour into prepared jelly-roll pan and bake at 375 for about 12 minutes. Cake should be done but not overly baked.
  • Roll cake up in towel. Cool completely. Unroll add jelly, roll back up chill. Sprinkle with powdered sugar if desired.
