Weekday Suppers need to be quick around my house. We often eat in shifts. What does that mean? My guy might need to eat dinner at 3:00 before leaving for the night shift. The same night, I might not get home until after 4:00. So how do we compromise?
For those nights I prep fresh meals that cook fast. Soup and sandwiches fit the bill.
Spring is here, so soups need to be lighter but still satisfying. Fresh Pea Soup delivers delicate pea flavor in a creamy vegetable broth base. No cream needed. Partner it with a honey turkey, fresh mozzarella, red pepper and arugula grilled cheese on sourdough. A surefire hit!
- Pea Soup
- 2 cups fresh or frozen peas
- 2 cups vegetable broth
- 1 small shallot, chopped
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- salt and pepper to taste
- bacon bits, (optional)
- Grilled Cheese Supreme
- 2 ounces turkey (per sandwich)
- fresh mozzarella slices
- roasted red pepper slices
- arugula
- sourdough or rye bread
- butter or cooking spray for grilling
- Soup
- Saute shallot in oil.
- Add peas and broth, bring to a boil. Reduce heat and simmer for 5 minutes.
- Add lemon juice, salt and pepper.
- Puree to desired consistency. Serve warm or cold. sprinkle with bacon bits if desired.
- Sandwich
- prepare griddle or panini press with cooking spray or butter bread
- Assemble sandwich and grill until hot and cheese is melted.
I like the optional of adding bacon crumbles but leave them out for a vegetarian option. I’m always up for a new grilled cheese combo.
