This baking mix is a lifesaver. Literally. That’s the story behind My Sweet Mercy.
For Robyn Heirtzler, baking became a passion that helped her work thorough some of her darkest moments while dealing with depression. Now she is passing some of her strength on to others by donating part of the proceeds from her baking mixes to help others worldwide.
Now to be honest with you, I seldom use any kind of baking mixes.
But after hearing Robyn’s story, I was intrigued. Robyn so graciously sent me a package of her Vanilla Baking Mix.
I love the way these cookies turned out! I used a bit of cinnamon and splash of chocolate liqueur.
Grown-up Cinnamon Chocolate Chip Cookies (adapted from My Sweet Mercy recipe)
- ½ cup unsalted butter, softened
- ⅓ cup light brown sugar
- ½ cup plus 1 Tablespoon sugar
- 1 egg, beaten
- 1 cup Sweet Mercy Vanilla Baking Mix
- 1 Tablespoon Chocolate Liqueur
- ½ teaspoon cinnamon
- ½ cup white chocolate chips
- ½ cup semi-sweet chocolate chips
- Cream together egg and sugars. Add butter.
- Add Sweet Mercy Vanilla Baking Mix, chocolate liqueur and cinnamon.
- Drop by teaspoonfuls onto a parchment-lined baking sheet.
- Bake in a preheated 350 degree oven for 9 to 11 minutes.
- Cool cookies slightly before removing from sheet.
