I’m a big fan of cookies.
I’d rather have a cookie than a piece of cake or any other dessert. As much as I love baking cookies, I hate making roll outs.
I could never get the dough right. Too dry, too sticky, baked too hard, crumbly, just not good. So I’d get my roll outs in cookie swaps or buy them outright.
So because of my lack of roll out cookie expertise, I never decorated cookies with icing. Can you believe it? Ha!
Well that changed when I found this recipe for sugar cookies that also added honey. If you are roll out cookie challenged like me then you will love this recipe. I included an easy Royal icing recipe to make frosting these gems a breeze.
I love baking cookies on this Silpat sheet. It easily withstands the heat. Love the fact you save on greasing the sheets. I honestly think cookies bake more evenly too with the Silpat silicon sheet.

Honey Sugar Cookies
Add at least 2 hours for dough chill time.
Ingredients
- 2 1/2 cups flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 sticks butter
- 1/2 cup sugar
- 1/4 cup honey
- 1 egg
- 1 teaspoon vanilla (I used Adams)
- 2 tablespoons meringue powder
- 1 lb box powdered sugar
- 5 to 6 tablespoons water
- Sprinkles optional (I used frozen-Sprinkle Pop )
Instructions
- beat butter and sugar until fluffy. Add egg, honey and vanilla.
- In a separate bowl, whisk together flour, baking powder and salt. Add to wet mixture to form soft dough. Divide dough in half. Wrap each piece in plastic wrap and refrigerate until firm.
- When dough is ready, position oven racks into top and bottom thirds. Preheat oven to 350. Line baking sheet with Silpat.
- Roll out dough on floured surface and cut into desired shapes. Bake on top rack 10 minutes the switch to bottom rack for approximately 10 minutes until cookies are golden brown on the bottom. Cool on sheet several minutes before transferring to rack to finish cooling.
- Whisk together powdered sugar and meringue. Add water a tablespoon at a time until desired consistency is reached. Decorate as desired.
