Sweet or savory, let’s celebrate all things peanut butter!
I hated peanut butter as a kid. That’s right. None for me thanks.
That changed as I aged and my peanut butter loving daughter wanted PBJ for her school lunches.

What I like about these peanut butter cookies most is that they stay soft. A soft, chewy cookie always tastes better to me!
I like cookie sandwiches as a change of treats. A layer of strawberry jam frosting makes these cookie sandwiches both pretty and tasty!
Jamming Peanut Butter Cookie Sandwiches
Plus chill time and cooling time.
Ingredients
- 1/2 cup peanut butter
- 1/4 cup butter
- 1/4 cup shortening
- 1/2 cup sugar plus some for sprinkling
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup powdered sugar
- 1/4 cup strawberry jam
- 1 tablespoon shortening
- 1+ tablespoons water
Instructions
- Cream together butter, sugar, shortening, peanut butter. Add egg and vanilla.
- In a separate bowl, whisk together flour, baking powder, baking soda. Add to wet mixture.
- Chill dough for at least 30 minutes.
- Divide dough into 12 equal pieces. Flatten on cookie sheet with a fork criss cross pattern. Sprinkle with sugar.
- Bake at 375 for 15 to 18 minutes until set and slightly brown on bottom. Do not over bake. Cool on rack.
- While cookies cool, prepare frosting/filling. Mix together powdered sugar, jam, shortening. Add enough water to reach desired consistency. Fill cooled cookies sandwiches.
