I scream, you scream, we all scream for ice cream! Well, maybe not scream, but definitely a big smile. Part of summer fun is going out for ice cream. Standing in line and running your eyes up and down the flavors board trying to decide on just one, or maybe two! 🙂 Wafer cone? Waffle cone? Cup? If you’re a purest you go there with those choices already made. I like to switch it up. Sometimes I crave something not on the menu. That’s when a simple ice cream recipe comes in handy. Making your own ice cream also allows you to control the intensity of flavor. Mint and chocolate go wonderfully together. I like to use a dark cocoa. You can use either spearmint or peppermint extract. Both flavors work well. I always add a bit of vanilla whenever I make something with chocolate. Vanilla brings the deep chocolate flavor to the surface.

No Churn Mint Chocolate Ice Cream
Ingredients
- 1 14 ounce can sweetened condensed milk
- 1/2 cup cocoa
- 1 teaspoon vanilla paste or extract
- 1 teaspoon mint extract
- 2 cups heavy cream
Instructions
- Whisk together sweetened condensed milk, cocoa, vanilla and mint. Whip heavy cream into stiff peaks. Fold whipped cream in small batches into condensed milk mixture. Pour into chilled container and freeze for 5 to 6 hours until firm.
