There’s nothing like a good cocktail to welcome your guests to your winter dinner or party. From eggnog to mulled cider, there are so many to choose from. Which winter cocktail recipe will you make?

Ginger Caramel Apple Mule

I’m not a frequent mixed drink drinker. So coming up with a recipe for today’s Sunday Supper was a bit of a challenge.
Winter may be just around the corner, but I’m still hanging on to fall. So a compromise is in order. Ginger, apple and caramel flavors
work as well in winter as fall. Add a bit of orange juice and you have a delicious drink.
I used a caramel apple vodka, ginger beer and fresh orange juice to make this mule.
You can also use apple vodka and caramel simple syrup too.

Yield: 1 drink

Serving Size: 1 each

Ingredients

  • 6 ounces ginger beer
  • 1 1/2 ounces caramel vodka
  • 1 ounce fresh squeezed orange juice

Instructions

  • Fill a large rocks glass with ice.
  • Add ginger beer, vodka and orange juice. Garnish with an orange slice if desired.

Thanksgiving leftovers can be a challenge to serve. How many times do you want to do Thanksgiving dinner? Good thing the major cooking and clean up is done.
Now about those leftovers…
This dilemma is fairly common. So a few of my food blogging friends got together to kick around some recipe ideas for you. (And me too.) Thanks Camilla from Culinary Adventures with Camilla and Ellen from Family Around the Table for hosting this event!

For this event, I decided to make Turkey Croquettes. Leftover mashed potatoes never tasted so good!

Turkey Croquettes
Add chopped turkey, sauteed celery and onion to the patties. Dredge in flour, egg and seasoned breadcrumbs and fry to brown. Finish in the oven and serve with country gravy. Awesome!
Confession time. I make this with fresh ingredients too. It’s that good.

Yield: 8 patties

Serving Size: 1 each

Ingredients

    patties
  • 2 cups mashed potatoes
  • 2 cups cooked turkey, chopped
  • 1/4 cup diced celery
  • 1/4 cup diced onion
  • 2 tablespoons butter
  • breading
  • 1/4 cup flour
  • 1 to 2 eggs beaten
  • 1 cup breadcrumbs
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic salt
  • oil for frying

Instructions

  • Mix together potatoes and turkey. Season with salt and pepper if needed.
  • Saute celery and onions in butter until soft. Add to potato mixture. Form into patties.
  • In a separate bowl, combine breadcrumbs, Italian seasoning and garlic salt.
  • Dip patties in flour then egg and seasoned breadcrumbs.
  • Heat oil in a large oven safe fry pan. Fry to brown on both sides. Finish cooking in 350 oven for about 10 minutes until thoroughly heated.
  • Serve with gravy if desired.

Naturally Colored Holiday Treats and Trimmings

Holiday feast season is upon us. But there’s lots of room on the table for brightly-colored, nutritious foods. Show us your sweet or savory, naturally-colored/naturally-dyed holiday fare. Theme via idea from Casey the College Celiac.

That means I need some stress free recipes that look like I fussed all day! I’m kidding of course, but easy appetizers my guests will love will always top the list.

Color is an important component to any dish. As winter drabs set in, we need all the color we can get!
Steak Pistachio Pesto Crostini fits the bill! Green pesto, red tomatoes, yellow cheese and brown bread.

Pretty yes, but there’s more here than meets the eye!

A 3 ounce serving of lean beef (150 calories and less than 4.5 grams saturated fat on average) helps power your day with Iron, Choline, Protein,  Selenium, Vitamins B6 and B12. Also Zinc, Phosphorus helps, Niacin and Riboflavin.

Healthy Pistachios add a lively green to the basil based pesto. Pistachios are an excellent source of copper and manganese, and a good source of thiamin and phosphorus. They’re also an excellent source of fiber, vitamin B6, offering 20% of the Daily Value per serving.

 

It makes a great small plates addition to and party or family meal.
I pan fry the steak. Grilled is delicious too!
I used Certified Angus Beef ® brand strip steak for this recipe. I find it cooks up tender every time!

Steak Pistachio Pesto Crostini

Steak Pistachio Pesto Crostini

Yield: 8 to 10 servings

Serving Size: 1 each

Ingredients

  • 1 10 to 12 ounce strip steak
  • 1 tablespoon olive oil
  • 1 medium tomato, sliced thin
  • 1 baguette sliced into 8 to 10 pieces 1/2-inch thickness
  • 1/4 cup melted butter
  • 1/2 cup shaved smoked gouda
  • pesto
  • 1/4 cup salted pistachios
  • 1/2 cup fresh basil
  • 2 cloves garlic
  • 1/4 cup grated parmesan cheese
  • 1/4 cup olive oil

Instructions

  • Heat pan over medium high heat with olive oil. Season steak with salt and pepper. Cook steak 6 minutes per side for medium rare. Temperature 125 rare 130 medium rare. Rest on rack.
  • In same pan, sear tomatoes for about 30 seconds per side. Remove from heat. cover with grated cheese.
  • pesto
  • Add pistachios, garlic, basil and cheese in a food processor. Grind into paste. Slowly add olive oil and process into pesto. Add more oil if needed to reach desired consistency.
  • Brush both sides of bread with butter. Broil to golden brown.
  • Spread browned bread with pesto. Top with thinly sliced steak and tomato sliced with cheese.

Every holiday needs a salad. I’m not talking about only green salads– I mean pasta salads, potato salads, egg salads, chicken salads, any kind of salad you want to make! Any kind of salad goes. Bring your favorite holiday salad recipes to the table!

Cranberries are a must on my holiday meals list. I absolutely LOVE cranberries!

You have Thanksgiving and Christmas flavors of cranberries and walnuts in one bite!

Cranberry Walnut Potato Salad adds celery and fresh basil to Idaho® potatoes for a crunch factor. The dressing spices it up with spicy brown mustard and a pinch of horseradish.

I used canned cranberry sauce but homemade is surely better!

Cranberry Walnut Potato Salad

Yield: 4 to 6 servings

Serving Size: 1/2 cup

Ingredients

  • 1 lb Idaho® potatoes (2 large)
  • 1/2 cup diced celery
  • 1 tablespoon margarine
  • 2 tablespoons kosher salt
  • dressing
  • 1/2 cup cranberry sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon spicy brown mustard
  • 2 tablespoons sour cream
  • 1 tablespoon minced fresh basil
  • 1/2 teaspoon horseradish
  • salt and pepper to taste

Instructions

  • Coat potatoes in margarine and sprinkle with kosher salt.
  • Wrap potatoes in aluminum foil and bake at 350 for 1 1/2 hours.
  • Unwrap potatoes and allow to cool a bit before peeling. Cut into desired pieces (1 to 1 1/2-inches)
  • While potatoes cool, mix dressing ingredients.
  • Add celery to potato pieces. Coat with dressing.
  • Serve warm or cold.

Notes

Potatoes can be prepared a day ahead to save time.
