This month Fill The Cookie Jar is welcoming fall and thinking about Halloween recipes to share with you.

I like dressing up for Halloween. Costumes can be a fun way to get into the spirit, so to speak. 😉

So naturally I want to dress up my cookies, too!

I found these mini ghosts, bones and eyes at a local craft store. They seemed perfect to dress up these soft, orange cookies!

Spooky Bites #FillTheCookieJar

Yield: 18 to 24 cookies

Serving Size: 1 each

Ingredients

  • 1/4 cup butter
  • 1/4 cup shortening
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 tablespoon light corn syrup
  • 2 teaspoons vanilla
  • 1 teaspoon orange extract
  • 1 1/3 cups flour
  • optional (Halloween candies, sprinkles, gel icing)

Instructions

  • Cream butter and shortening together. Add sugars, baking soda and salt. Mix.
  • Add egg, corn syrup, vanilla and orange extract. Mix. Add flour. Beat until smooth.
  • Drop dough by tablespoonful onto cookie sheet. Decorate as desired. Bake at 375 for 7 to 9 minutes and cookies are slightly browned. Cool on rack.
  • Cookies remain soft and pliable when cool.

For this Sunday Supper, we’re bringing our best simple rice recipes to the dinner table.

Rice is one of the most widely consumed staple foods in the world, second only to bread. There are many different types of rice, from short-grain to long-grain and white to black. Because rice is so versatile in its flavors and filling, it easily rounds out just about any dinner.

I’m a sucker for autumn soups. I fall for them every time! 😉

Seriously, I love, love, love the flavors of fall! Apples worm their way into just about any dish from pizza to dessert. Apple Pizza, Apple Ice Cream, Apple Fritters, Apple Sauerkraut Salad just to name a few.

Pumpkin winds up in  bread, crackers, milkshakes and more.

I have a special place in my heart for winter squash.

Butternut Brown Rice Soup_
Roasting squash brings out its sweetness. Couple that smooth squash puree with nutty, brown rice and you get base for a delicious soup.
I kicked this soup up a notch with fresh thyme, smoked paprika and rich cream. Well, 2 percent milk but that can be our secret!

Butternut and Brown Rice Soup

Yield: 2 servings

Ingredients

  • 2 cups roasted butternut squash
  • 1/2 cup diced onions
  • 1 tablespoon butter
  • 1/4 cup vegetable broth
  • 1 cup 2 percent milk
  • 1 teaspoon fresh thyme leaves plus sprigs for garnish
  • 1 cup brown rice, cooked
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  • Saute onions in butter in a 2-quart saucepan until onions are tender
  • Add squash, milk and broth to the onions. Puree with hand blender or pour ingredients into conventional blender.
  • Heat puree over medium heat, add brown rice, thyme, paprika, salt and pepper. continue cooking until thoroughly heated.

Who says no to waffles? Not me. I love watching those little doughy square fill up with syrup. What I find most intriguing is pairing different waffles with different toppings. What a challenge.
For today’s contribution to #WaffleWeek2017, I went with one of my favorites, Cherry Pie.
Oh My Cherry Pie Waffles uses the best parts of the pie. That would be the filling and the crumbs! 😉

I used dark sweet cherries for these waffles instead of the traditional tart cherries or sour cherries for pie. If you love the real deal, crust and all, try this Cherry Pie Recipe.

Maybe cherry pie flavor in a mini version is more your style. Try these Cherry Pie Tassies.

Oh My Cherry Pie Waffles #WaffleWeek2017

Yield: 4 waffles

Serving Size: 1 each

Ingredients

    batter
  • 2/3 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 egg, beaten
  • 1/2 teaspoon vanilla
  • 1/2 cup chopped sweet dark cherries, fresh or frozen
  • 1 tablespoon vegetable oil
  • syrup
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup chopped sweet dark cherries
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla
  • crumbs
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup cold butter cut into small pieces

Instructions

  • Whisk together flour and brown sugar. Cut cold butter into mix to form crumbs. Set aside.
  • syrup
  • Bring sugar, water, cherries, vanilla and maple syrup to a boil over medium heat. Cook until sauce reduces and thickens. Whisk frequently. Set finished sauce aside.
  • waffle batter
  • Whisk together flour, baking powder and salt.
  • In a separate bowl, whisk together egg, buttermilk, vanilla and oil. Add cherries. Combine mixture with dry ingredients.
  • Spray and heat waffle iron. Pour in batter and cook according to waffle iron directions. Top with syrup, sprinkle with crumbs. Add more cherry halves if desired.

Notes

Have a few extra cherry halves on hand for garnish.
