Remember oranges and apples covered in cloves? We would take an orange or apple and pierce it with a bazillion tiny clove spikes. You gave your new air freshener to Mom as a Mother’s day, Birthday or Christmas gift. That clove ball made the entire house smell so good!

New England Clam Chowder #SundaySupper Soup Celebration
This week our Sunday Supper group is celebrating that wonderful Soul Warming, Belly Warming, Glasses Steaming, One Pot Recipe concoction better known as
SOUP!
I love soup of all kinds, so when Pam from The Meltaways suggested a soup theme I couldn’t wait to see all the great ideas! Thanks Pam!
One of my favorite soups is New England Clam Chowder. Truth be told, every time I make it I change it just a little depending on my mood. Sometimes I leave the bacon out. I hear you, I know who would leave bacon OUT? Add carrots, sure. Mussels? Why not? Anyway, as you can see it is an easily adaptable recipe but I always leave it as a white chowder version. Have fun with it and make it your own. Let me know how it turns out!
New England Clam Chowder
- Ingredients
- 3 cups clam juice
- 1 cup fish or chicken stock
- 3 medium potatoes, peeled and diced (about 3 cups)
- 1/2 cup diced celery
- 1/2 cup diced onion
- 2 tablespoons olive oil
- 3 cans chopped clams with juice
- 2 cups half and half or (light version use 2 percent milk)
- 1 cup potato flakes, divided
- 4 strips cooked bacon, chopped
- Salt and pepper
- Parsley for garnish
Sauté celery and onions in oil over medium heat until soft but not mushy. Set aside.
Cook potatoes in clam juice and stock over medium heat until cooked about half way through. At that point, add the celery, onions and clams with juice.
Continue cooking until potatoes are soft not mushy. Remove from heat and add half and half and bacon.
Add 1/2 cup of potato flakes and gradually add remaining flakes until you reach desired consistency. Salt and pepper to taste.
