Every second counts in my house when it comes to making dinner. That goes for prep time right through clean up. I like the idea of serving meals made from scratch. I say I like the idea, because after a full day at work and hours of blogging ahead of me, time is a huge factor.
One way to solve this problem of time is to speed up your side dishes.
Libby’s Vegetable Pouches are a great time saver. These easy to open microwavable pouches cook in less than a minute. No fumbling with a can opener and dealing with sharp edges. If you ever struggled with the ninja packaging some companies choose to house their product you understand.
I love the fact that these pouches are environmentally friendly too. It takes 75 percent less energy to produce these BPA non-intent material lined pouches. The sleek design takes up less space in my cupboard and the empty pouches fold flat. The flattened pouches aren’t bulky and easy to dispose.
Adding vegetables to leftover rice created an all-in-one side dish that my family loved. I dressed this rice medley up a bit with some browned Capellini. Start to finish, this dish took less than 10 minutes!

Browning the pasta takes less than a minute.
Add the rice and seasoning.
Finish the dish with steamy, hot vegetables.
Total time is less than 10 minutes!
Pea and Green Bean Rice Medley
- 2 cups cooked white or brown rice
- ½ cup Libby's peas
- ½ cup Libby's green beans
- ¼ cup uncooked, broken angel hair pasta
- 2 Tablespoons olive oil
- 1 Tablespoon lemon juice
- ½ teaspoon dried thyme
- Salt and Pepper to taste
- Chopped parsley for garnish, optional
- Heat oil and pasta on high for 1 minute until browned.
- Remove from heat and add rice, thyme and lemon juice. Return to stove heat thoroughly over low-medium heat for 3 to 5 minutes. Stir frequently.
- While rice heats prepare peas and beans according to package directions.
- Drain ½ cup peas and ½ cup beans. Stir into rice. Salt and pepper to taste. Serve garnished with parsley if desired.
