If you love pumpkin you need to try this soup. My Spicy Pumpkin Soup has a delicate balance of flavors. Chili powder, cinnamon, smoked paprika add the warmth. Cayenne kicks in a bit of heat. Cabot plain yogurt tames the taste, just right! I also make this with Cabot Vanilla Bean yogurt. Vanilla is wonderful for balancing flavors. The subtle sweetness adds the right touch to the mix!

Ingredients
- 2 cups pumpkin puree
- 1 1/2 cups yogurt divided
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon cinnamon
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1/4 cup pepitas
Instructions
- Whisk together pumpkin, 1 cup yogurt, milk, and spices in a 2-quart saucepan. Bring to a boil, reduce heat and simmer for 5 minutes.
- Portion and top with remaining yogurt and pepitas.
