Turkey Croquettes might conjure up an image of Ma’s Diner to some people. I see a great way to use two or maybe three Thanksgiving leftovers.
Years ago I’d make a big turkey dinner with mashed potatoes, stuffing, sweet potatoes, corn, gravy, cranberry sauce, gravy, pie, pumpkin roll and more. Did I say gravy?
Leftovers went home with guests and family in plastic containers and baggies for snacking or Friday’s lunch.
Now its just the two of us, and even scaled that same dinner means we’ll have leftovers.
Stuffing, shredded turkey and broth make a delicious patty. Top with Chicken Milk Gravy and you’ll forget it was made from leftovers!

- 3 cups leftover stuffing
- 2 cups shredded cooked turkey
- ½ cup chicken or turkey broth
- ½ cup chopped celery
- ¼ cup chopped onion
- 1 Tablespoon olive oil
- 1 teaspoon seasoned salt (optional)
- ¼ cup flour
- 2 eggs, beaten
- 1 tablespoon water
- ½ cup seasoned breadcrumbs
- cooking spray
- Saute celery and onion in oil until soft.
- Mix turkey, stuffing, broth and vegetables together. Add seasoned salt if needed.
- Scoop ¼ cup patties and dredge in flour, egg wash and crumbs.
- Place patties on parchment lined baking sheet. Spray with cooking spray.
- Bake at 350 until browned and thoroughly heated, about 20 minutes. Turn once about halfway thorough cooking.
- Serve with your favorite gravy.
