My First recipe for #AppleWeek is a little Danish pancake ball known as an Ebelskiver. These filled pancake treats traditionally have cooked apples inside.
Ebelskivers are made in a unique pan specially designed to create the puffed balls. I received an Ebelskiver Pan from Nordic Ware to create a new version of these classic pancakes. You can learn more about this cool pan and how to buy one

I chose to make a version of an apple crisp with an oat topping and apple pie filling. I added my homemade apple syrup for extra apple goodness.
You start by brushing the wells with a bit of butter and adding the oat crumb topping. I used Flahavan’s Oatmeal Ireland’s favorite Oatmeal. Taste the difference. Flahavan’s oats are grown and harvested locally in small batches to capture the rich delicious flavor that is original Irish Oatmeal.
Next, add batter then your filling and top with more batter. A gently press on the filling to submerge it a bit before adding more batter.
Small in size but mighty in taste, these pancakes cook very fast. After about 2 minutes or when bottom is golden brown it’s time to flip them.
That’s the fun part. I use a pair of skewers to quickly flip the balls. The second side cooks in about half the time as the first.
Serve these with the apple syrup, your favorite syrup or pancake topping.
Here’s the recipe for Apple Crisp Ebelskivers you can make at home.
Ingredients
- 2 tablespoons melted butter to coat pan
- 2/3 cup flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla (I used Rodelle Vanilla)
- 1 apple, peeled and shredded (I used Envy Apples)
- 1 tablespoon butter
- 1/2 teaspoon cinnamon (I used The Spice House)
- 1 tablespoon lemon juice
- 1 teaspoon brown sugar (I used Imperial Sugar)
- 1/8 teaspoon cayenne pepper
- 1/4 cup rolled oats (I used Flahavan's Oatmeal
- 2 tablespoons brown sugar
- 2 tablespoons butter
- 1 tablespoon flour
- 1 1/4 cups apple juice
- 2 tablespoons sugar
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1 tablespoon cornstarch
Instructions
- Whisk together flour, baking powder and salt. In a separate bowl, whisk together milk, vanilla, and egg. Set aside.
- Cook oats, butter, brown sugar and flour over medium heat until oats are soft yet chewy. Set aside.
- Cook apples, butter, cinnamon, lemon juice, brown sugar and cayenne over medium heat until apples are soft and mixture form a syrup. Set aside.
- Whisk together juice, cinnamon, sugar, vanilla and cornstarch over medium heat until thick and bubbly.
- Coat Ebelskiver pan wells with a bit of butter.
- Add 1 tablespoon crumbs Then add 1 tablespoon batter. Press in 1 to 2 tablespoons filling. Top with more 1 tablespoon batter.
- Fry about 1 to 2 minutes until golden brown. Flip and fry an additional 1 or more until thoroughly cooked.
- Serve with warm apple syrup or your favorite pancake topping.
