It starts with the beef.

I chose to use thin slices of beef tenderloin steaks instead of ground beef in these tasty stackers. Lean beef cooks so quickly that it’s a natural protein choice  for a busy weeknight meal.

Beef pairs well with fall flavors like mellow butternut squash and crisp, sweet apples.

I sprinkled a bit of brown sugar and cinnamon on top to draw out the natural sweetness of butternut squash. Did you also know that cinnamon goes great in beef dishes? So tasty!

Dark green spinach adds color and texture.

I served these beauties with  yellow rice. Don’t all those beautiful colors make the plate pop?

Beef Apple and Squash Napoleons

Yield: 4 servings

Ingredients

  • 2 (8-ounce) filet of sirloin
  • 1 Tablespoon plus 1 teaspoon olive oil
  • 1 apple, (Gala, Fuji, Honeycrisp or other firm sweet apple)
  • 1 medium-sized butternut squash
  • 1 cup baby spinach
  • 1 teaspoon cinnamon
  • 2 Tablespoons brown sugar
  • salt and pepper to taste

Instructions

  • Preheat oven to 375 degrees.
  • Slice butternut squash neck into 8 1/4-inch pieces. Peel. Save remaining squash for other recipes.
  • Core and slice apple into 1/4-inch pieces. Leave skin on apple.
  • Toss squash and apple slices in 1 Tablespoon olive oil and arrange in single layer in baking dish. Sprinkle with cinnamon and brown sugar. Bake 10 to 15 minutes until cooked but still firm.
  • While squash bakes, slice steaks into 1/4-inch pieces. Lightly pound with mallet for even cooking.
  • Preheat large sauté pan or frying pan over medium-high heat. Season steak with salt and pepper. Add a small amount of oil to the pan and heat.
  • Fry 2 to 3 minutes per side until reaching desired doneness. Place steak pieces on plate to rest before assembly. Set pan aside.
  • While steak rests, sauté spinach in pan drippings to wilt for about 1 minute.
  • Assemble on individual plates. Layer squash, beef, spinach and apples. Repeat.
