Welcome to another addition of meals from Our Family Table! Today we’re featuring some of our favorite Soups, stews and chili.

Chicken Chili

Chili was always a quick go to at my house. I know there is a great debate whether true chili has beans or not. I feel it’s up to the individual’s taste.
I eat beans of all kinds. I think black beans are my favorite. My guy on the other hand doesn’t eat beans. He will eat green string beans, but not soup beans or baked beans. That just means more for me!
My chicken chili uses a few short cuts to save time. I use chili flavored beans and canned diced tomatoes with green chilies. Both these items are found under various brands in the canned food aisle.
If you prefer a total scratch recipe, use regular canned beans, chili powder, garlic, salt, pepper, cumin, diced tomatoes, diced jalapenos, onions, tomato sauce, lime and chicken.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4 to 6 servings

Serving Size: 1 cup

Chicken Chili

Ingredients

  • 8 ounces chicken breast cut into 1/2-inch pieces
  • 1 14-ounce chili beans
  • 1 14-ounce can diced tomatoes with green chilies
  • 1 cup chopped kale

Instructions

  • Cook chicken and kale in water on medium heat until thoroughly cooked, about 10 minutes. Drain.
  • Add beans and tomatoes. Heat thoroughly. Serve.
