Chicken Parmesan Grilled Cheese with Chicken Vegetable Soup an unbeatable match! A hearty soup and sandwich combo or stand alone meals.
I grew up on grilled American Cheese sandwiches, no other cheese would do. A cup of hot tomato soup with a touch of milk. That combo is still good but why stop there?
This week Sunday Supper asks us to show off a great soup and grilled cheese combo.
Today anything and everything goes into a grilled cheese sandwich. As long as it has cheese and bread and grilled it’s grilled cheese.
I think that includes melts too. Like this tuna melt.
Maybe a Supreme with the works is more to your liking.
So Chicken Parmesan served grilled cheese style fits right in. Thin sliced cooked chicken, marinara and Italian blend cheeses grilled between two thick slices of buttery Texas toast.
My choice of soup was easy. A soup that starts with fresh whole chicken. Add whatever veggies you have on hand. Try a few new ones too.
I made my Chicken Vegetable Soup with kale, carrots, green beans, onions, butternut zoodles and celery.
Chicken Parmesan Grilled Cheese with Chicken Vegetable Soup
Ingredients
- 1 4-ounce cooked chicken breast
- 2 slices Texas Toast
- 2 ounces shredded Italian blend cheeses
- 2 tablespoons marinara
- 1 teaspoon Italian seasoning
- 2 tablespoons butter
- 1 (4 pound) chicken cut up
- 2 quarts chicken stock
- 4 cups shredded kale
- 2 cups celery
- 2 cups carrots
- 4 cups butternut zoodles
- 2 cups chopped bell peppers
- 2 cups onion chopped
- 1 cup chopped broccoli
- salt and pepper to taste
Instructions
- Butter one side of each piece of Texas Toast. Place butter side down in skillet, Sprinkle with cheese.
- Heat chicken in pan. Add chicken to one side of toast. Top with marinara. Sprinkle with Italian seasoning, salt and pepper. Grill to golden brown.
- Place chicken pieces in large pot. Add stock, enough to cover chicken. Cook until tender and thoroughly cooked, about 1 hour. Remove chicken, cool slightly remove skin and bones.
- add vegetables to broth. Cook until tender. Add chicken back into pot. Serve.
