Chicken Sausage Stuffed Baked Apples is an easy fall meal your family will love. These filled dinner apples will disappear fast!
I love stuffing fruit and vegetables this time of year. Apples and squash are natural vessels for fillings. A firm baked apple holds it’s shape and adds a bit of sweetness and fall flavor to the dish.
Carve out the core and a bit more apple to form a cavity. Fill with the chicken sausage stuffing and bake uncovered for about an hour until the apple is soft but not mushy.
Precooked chicken sausage is a great time saver. Saute the celery and onions then crumble in the sausage. Add your broth, bread and seasonings and your filling is ready.
Ingredients
- 4 medium-sized apples, peeled, cored and dug out (I used Envy Apples)
- 1/2 pound cooked chicken sausage, diced
- 1/4 cup diced celery
- 1/4 cup diced onion
- 1 tablespoon vegetable oil
- 1/4 cup chicken broth
- 1 cup bread cubes
- 1/4 teaspoon dried thyme
- salt and pepper to taste
Instructions
- Saute celery and onions in oil until soft. Add chicken sausage and broth. Bring to a boil, reduce heat and simmer until thoroughly heated.
- Remove from heat. Add bread and seasonings.
- Fill apples and pack tightly.
- Spray baking dish with oil. Add apples and any additional leftover stuffing. Bake at 350 for approximately 1 hour until apples are soft but not mushy.
I’m a sucker for a versatile apple like these New Zealand variety. It’s a great eating apple. I also made pie with it and today’s Chicken Sausage Stuffed Baked Apples!
You can drizzle Chicken Sausage Stuffed Baked Apples with honey but using a sweeter apple works great!
