Chocolate Popcorn Peeps Treats combine popcorn balls with chocolate and banana chips. Pretty bunnies and chicks on a stick sit on top. Festive green, yellow, purple and pink coconut makes an edible display.

I live in the land of Peeps, Lehigh Valley, PA. Peeps were born here (pardon the pun). New Year’s Eve they lower a giant Peep. Pretty cool, huh?

Peeps are a fun part of #SpringSweetsWeek ! Bunnies and Chicks were everywhere!
I decided to make a display instead of using Peeps in a recipe. These peeps are on a stick so they stand tall on their chocolaty popcorn mounds in a field of edible Easter grass. Actually it’s colored coconut!
Did I mention that I put dried banana chips in with the popcorn? I broke the chips into small pieces so it’s easy to eat. It’s a good substitution for nuts too.
Ingredients
- 8 cups popcorn
- 1/2 cup sugar
- 1/2 cup light corn syrup
- 2 tablespoons water
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1/2 cup chocolate chips
- 1/2 cup banana chip bits
- 2 cups sweetened coconut
- food coloring
Instructions
- In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage).
- Remove from the heat. Add the butter, chocolate chips and banana bits. Immediately pour over popcorn and stir until evenly coated.
- While mixture cools, divide coconut into several bowls. Color as desired.
- When mixture is cool enough to handle, spoon tablespoonfuls of mixture onto parchment paper to cool.
- Add a lollipop stick to Peeps and place on cooled popcorn. Set popcorn on coconut.
