Something chocolate was in order for today’s cookie recipe. I love all kinds of cookies, but I would be a amiss to no include a chocolaty offering.

Chocolate shortbread is not as sweet like a lot of cookies. These tend to be on the dry side. A good dunking cookie! A hot steaming cup of coffee or hot chocolate and I’m set. Oh yeah, and a dozen of these cookies!

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 18 to 24 cookies

Serving Size: 1 each

Chocolate Shortbread

Ingredients

    cookies
  • 2 sticks unsalted butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon cloves
  • 1 1/4 cups powdered sugar
  • 1/3 cup cocoa
  • 2 cups flour plus more for dusting
  • icing
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

    cookie
  • Beat butter, egg, vanilla, salt and cloves until creamy.
  • Add sugar and cocoa. Slowly add flour.
  • Turn dough out onto lightly floured board. Roll to 1/4-inch thickness. Cut into shapes.
  • Bake on bare sheet (no spray or liner) in top third of oven at 350 for about 10 minutes than switch pan to bottom third to finish baking, about another 10 minutes.
  • Cool on pan several minutes before moving to rack to finish cooling.

  • Whisk together sugar and one tablespoon of water at a time until it reaches desired consistency.
