This is my first year participating in The Great Food Blogger Cookie Swap hosted by Lindsay of Love & Olive Oil and Julie of The Little Kitchen!

This event benefits  COOKIES FOR KIDS’ CANCER, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease. By participating in this cookie swap we are not only contributing to the food blogger community, but also supporting a great cause.

How it works: You bake 3 dozen of the same cookie. Lindsay and Julie “swap” our names. We get 3 names each to send out our cookies and your name go out to 3 other bloggers. You get 3 dozen cookies back. A different one from each blogger. Pretty cool, huh?

Chocolate Spice Coffee Bean Cookies

Ingredients
  • 1½ cups flour
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • 2 Tablespoons dark cocoa
  • 8 Tablespoons unsalted butter
  • ½ cup brown sugar
  • ½ cup maple syrup
  • 1 teaspoon baking soda
  • 1½ teaspoons boiling water
  • 1 cup chocolate covered coffee beans
  • ¼ cup granulated sugar.
Instructions
  1. Combine flour, cinnamon,cloves, and cocoa in a medium-sized bowl.
  2. In a separate bowl, beat together butter and brown sugar. Add syrup.
  3. Dissolve baking soda in boiling water.add to butter mixture.
  4. Add half the flour mixture at a time to the butter mix. Beat well. Add coffee beans.
  5. Wrap dough in plastic wrap and refrigerate at least 2 hours until firm.
  6. Roll pieces into 1½ inch balls. roll balls in granulated sugar and place on parchment lined baking sheet.
  7. Bake at 325 until dough sets and cookies begin to crack (about 10 minutes)
  8. Move to wire rack to cool.
