Creamed Dried Beef aka SOS is one of those extra rich, eat only once a year foods for me. The smoky goodness is hard to pass up.
I admit it is an extra hearty breakfast. I like it over homemade corn waffles. Gluttony? If I’m only going to eat it once a year, I’ll make it for dinner.
Luckily for me our Sunday Supper Group is serving Breakfast for Dinner this week!

Cream Dried Beef and Waffles
- 1 cup cornmeal
- 1 cup flour
- 1 Tbsp baking powder
- 1 Tsp salt
- 6 Tbsp sugar
- 2 eggs
- 1 cup plain yogurt
- 1/2 cup milk lowfat or skim
- 1/4 cup oil
Ingredients
Preheat a waffle iron.
Whisk dry ingredients in a large bowl.
Add eggs milk and oil and whisk until smooth.
Spray a heated waffle iron with cooking spray. Add 2/3 cup batter and cook until crisp and lightly browned, 5 to 6 minutes.
Keep warm in oven or reheat in toaster.
Trust me when I say you want your Dried Beef to be paper thin. This meat is very salty so use unsalted butter and don’t add salt to the sauce.
Béchamel Sauce
- 3 cups milk (2 percent is fine)
- 1/2 cup flour
- 1/4 cup butter
- 1/8 teaspoon nutmeg
- Ground pepper to taste
- 1/2 pound chipped dried beef
Ingredients
In a 2 quart saucepan, stir flour and butter together over medium heat to form a soft ball. Whisk in milk a little at a time, mixing in completely before adding more liquid. Bring to a boil, stirring constantly. Remove from heat. Stir in dried beef.
You can eat it right away but if you have a little patience, oh say overnight in the fridge, you will be rewarded!
Refrigerating overnight blends flavors beautifully. Use as is or divide into smaller portions and freeze.
Heat creamed beef in microwave or on stovetop over low heat. Arrange waffles on a plate and spoon creamed beef over top.
