This week Sunday Supper takes meal planning to the next level. We’re sharing our tips and recipes to rival delivered boxed prepped meal services. Making your own at home saves you time and money in the long run.
You also have control on every ingredient. It’s always great to try new seasonings and flavors. If a family member can’t have or doesn’t like a certain ingredient, you get to leave it out of their meal. No one excluded, no fuss, no fights. Sounds good, right?
Ham and Broccoli Meal Prep Bowls starts with meat that is already cooked. I like using fully cooked ham and turkey ham for a quick meal. Pair ham with cooked broccoli, mushrooms, mixed bell peppers and rice.
Arrange in a microwaveable bowl.
Heat and Eat. Easy peasy!
Ingredients
- 1 8-ounce fully cooked ham steak, diced
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 2 cps cooked rice
- 1 cup bell pepper slices
- 1 tablespoon butter
Instructions
- Fry mushrooms and peppers in butter until golden brown, set aside
- steam broccoli until crisp tender.
- Divide rice, ham, broccoli, peppers and mushrooms evenly between 4 microwave safe bowls or oven safe containers.
- Refrigerate until ready to heat and eat.
