Fritters are part of my PA Dutch side. Fried foods were a staple for me, growing up. Fried potatoes, fastnachts aka fried doughnuts, funnel cakes, you get the picture.
I believe in everything in moderation. Well, when it comes to food anyway ;).
Lemon and blueberry are one of my favorite flavor combinations. I used this combo in ice cream, smoothies and even salads.
So today I’m sharing it in fritters with the help of today’s sponsor, Adams Extracts.

Lemon Blueberry Fritters
Lemon Blueberry Fritters
Ingredients
- 1/3 cup butter
- 1/2 cup sugar
- 1/2 tsp lemon extract (I used Adams Extract)
- 2 each eggs, beaten
- 1 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1 cup blueberries (I used wild frozen blueberries)
- glaze
- 2 cups powdered sugar
- 4 tbsp water divided
- 1 tsp lemon extract (I used Adams Extract)
- lemon zest (optional)
Instructions
- Cream together butter, sugar and lemon extract. Add eggs and beat until fluffy.
- Combine flour, baking powder and salt. Alternate adding a bit of flour mixture with adding milk.
- Stir in blueberries.
- Fry at 365 degrees, about 4 minutes on each side until golden brown. Remove and to drain off excess grease place fritters on paper towels. Mix together powdered sugar, lemon extract and water as needed to get drizzle consistency. Drizzle over fritters.
