Side salads are a must for any BBQ. I enjoy a bit of potato salad, mac salad or some kind of slaw with my burger, grilled chicken or steak.
Sometimes I serve the usual fare like my Roasted Potato Salad
or baked beans.

Ingredients
- 1 12-ounce bag frozen tortellini
- 2 tablespoons fresh dill plus sprigs for garnish
- 1/4 cup roasted red peppers, sliced thin
- 1/4 cup sliced green onion
- 4 tablespoons freshly squeezed lemon juice
- 6 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- zest from one lemon
Instructions
- Cook tortellini according to package directions. Chill.
- Whisk together oil, lemon juice, salt and pepper.
- Toss peppers, dill and onion with dressing. Fold into tortellini. Sprinkle with lemon zest.
