Chocolate and mint are a legendary combination. Peppermint Patties, Andes Candies and Thin Mints to name a few.
Did I mention it is one of my favorite pairs too?
Rolled oats is such a versatile grain. Those flakes make great breakfast treats like oatmeal cereal and even pancakes.
Mint Chocolate Peanut Butter Oatmeal Bars are kind of a cross between granola and cereal bars. Eat these tasty treats any time of day!
Mint Chocolate Peanut Butter Oatmeal Bars
Ingredients
- 1 cup butter
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- 3 cups rolled oats
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter
Instructions
- Line an 8-inch square baking dish with parchment paper and set aside. Overhang the paper slightly to lift out bars in one piece from dish.
- Melt butter and brown sugar over medium heat, until sugar has dissolved. Stir in vanilla and mint. Fold in oats.
- Cook over low heat for 3 to 4 minutes until ingredients are blended.
- Pour half of the mixture into the prepared dish. Spread out the mixture evenly, pressing down. Reserve the other half for second layer.
- Melt peanut butter and chocolate chips together in a small microwave-safe bowl 10 seconds at a time and stir until it’s smooth.
- Pour the chocolate peanut butter mixture over the crust in the pan, spread evenly. Keep about 1/4 cup for drizzling on top if desired.
- Pour the remaining oat mixture over the chocolate layer, pressing in gently and drizzle with the remaining chocolate mixture.
- Refrigerate at least 2 hours or overnight. Bring to room temperature before cutting into bars.
