Wow! Those are really great prizes! Today I want to give special thanks to Anolon. for supplying me with this bakeware set for our event. The loaf pan I used to bake my Mint Chocolate Quick Bread in is truly nonstick. I love the silicone grips on this Advanced Anolon series!

This quick bread is perfect for a breakfast or brunch treat. Even an after school or after work snack ;).
Mint Chocolate Quick Bread
Ingredients
- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 1 cup buttermilk
- 1/2 tsp vanilla
- 1/2 tsp peppermint extract
- 2 cups flour
- 1/2 cup cocoa
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- glaze
- 1 1/2 cups powder sugar
- 3 tbsp water, divided
Instructions
- Preheat oven to 350 grease a 9x5-inch pan if not using Advanced Anolon. Cream together butter and sugar. Add eggs, vanilla and peppermint.
- In a separate bowl, whisk together flour, cocoa, baking powder, baking soda and salt. Alternate adding buttermilk and dry ingredients to the mix.
- Pour into prepared pan and bake at 350 for 50 to 60 minutes until inserted toothpick comes out clean. Cool on wire rack for 15 minutes before removing from pan to complete cooling.
- Mix together powdered sugar and 1 teaspoon of water at a time to reach desired consistency. Pour glaze over cooled bread.
