Mint Chocolate Yogurt Pudding
Ingredients
- 1/3 cup water
- 1 cup brown sugar
- 1/3 cup cocoa
- 1/8 teaspoon salt
- 1 3/4 cups milk, divided
- 1/4 cup cornstarch
- 1 cup yogurt (I used Nancy's yogurt)
- 1 teaspoon vanilla
- 1/2 teaspoon mint extract
Instructions
- Stir cornstarch into 1/4 cup milk. Set aside.
- In a medium-sized saucepan, over low heat, bring water, cocoa, brown sugar, salt and 1 1/2 cups milk to just under a boil (about 190 degrees).
- Remove from heat and stir in cornstarch mixture, vanilla and mint. Return to low heat and cook until pudding starts to thicken.
- Remove from heat. Stir in yogurt and portion if desired.
- Pudding will thicken as it cools.
Notes
Cover with plastic wrap directly on pudding as it cools to avoid scum coating.
