Every month our #FillTheCookieJar cookie loving group meets to share our best cookies and bars to fit the theme. This month we will be sharing cookies that remind us of Christmas!
So many cookies come to mind when I think about Christmas Cookies. Lot of them are labor intensive like kiffels and spritz cookies. Even roll-outs can be very time consuming.
So I’m sharing a no-bake recipe that looks like you slaved away all day to make a special treat.
No-Bake PB Creme Filled Sandwich Cookies
Easy to make. They won’t last long!
Peanut butter and cream cheese filling, sandwiched between 2 vanilla wafer cookies. Oh yeah, then I dipped them in chocolate!

Ingredients
- 30 vanilla wafers
- 4 ounces cream cheese, softened
- 2 tablespoons peanut butter
- 1/4 cup powdered sugar
- 1 bag chocolate wafer melts
- 1 tablespoon shortening
Instructions
- Cream together cream cheese, peanut butter and powdered sugar.
- Spread filling on the bottom of half the cookies. Top with another cookie bottoms facing each other.
- Melt chocolate wafers with shortening.
- Dip cookies. Drain on parchment-lined rack.
- Refrigerator cookies up to one week.
