Caesar Salad Stuffed Shrimp shares it’s flavor with the famous salad. Diced tomato, cucumber, olives and feta stacked atop a moist, tender shrimp. Sprinkle with freshly grated Parmesan. Serve with a side of Caesar dressing for dipping.

I love a good Caesar salad with chunks of cucumbers, olives, red onions, juicy ripe tomatoes and lots of Parmesan cheese. A few croutons for crunch isn’t a bad idea either. Shrimp adds a nice portion of protein to top it off.

Cook it safely

  • Check oysters, mussels, and clams before cooking. If shells don’t clamp shut when you tap them, throw them away. After cooking, also toss any that didn’t open.
    This means that they may not be safe to eat.
  • Cook shrimp, lobster, and scallops until they are opaque (milky white). Cook fish to 145°F, until it flakes with a fork.

Stock up on canned tuna or salmon for a quick economical weeknight meal. Think outside the box and add salmon to make classics like tuna casserole a new dish. Canned fish also makes quick sandwich spreads and protein additions for salads.

Caesar Salad Stuffed Shrimp

Yield: 10 to 16

Serving Size: 1 each

Ingredients

  • 1 pound shrimp 16/20 or larger
  • 1 teaspoon seafood seasoning like Old Bay
  • 1 medium cucumber, diced
  • 1 small tomato, seeded and diced
  • 1 tablespoon red onion, diced
  • 1/4 cup crumbled feta cheese
  • 1/2 teaspoon oregano
  • 1/4 cup cream cheese
  • 1/4 cup mixed olives
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • salt and pepper to taste
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup fresh baby spinach
  • 1 cup Caesar dressing
  • croutons optional

Instructions

  • Marinate cucumber, tomato, onion, olives, oregano, salt, pepper and feta in the oil and vinegar for about 30 minutes.
  • Butterfly shrimp. Steam until milky colored and cooked. Remove and chill.
  • Drain salad mixture. Add cream cheese and combine.
  • Place a small amount of spinach on the plate. Spoon into upright shrimp.
  • Sprinkle with freshly grated Parmesan.
  • Serve with Caesar dressing for dipping and croutons if desired.

Crab Louie Deviled Eggs

Crab Louie Deviled Eggs

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: 12

Serving Size: 1 each

Ingredients

  • 6 hard boiled eggs
  • 1/4 cup thin sliced green onion
  • smoked paprika
  • Creamy Hot Sauce
  • 1/4 cup low-fat sour cream
  • 2 tablespoons hot sauce
  • filling
  • 1 6-ounce can lump crab meat, drained
  • 1/4 cup mayonnaise or low-fast mayonnaise
  • 1/4 cup low-fat sour cream
  • 2 teaspoons chili sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon lemon juice
  • 1/4 teaspoon horseradish
  • salt and pepper to taste

Instructions

  • Mix together hot sauce and sour cream. Set aside.
  • Mix together crab, mayonnaise, sour cream, chili sauce, lemon juice, horseradish, Worcestershire, salt and pepper.
  • Slice eggs and remove yolks. Arrange whites on a platter. Add yolks to crab mixture.
  • Spoon or pipe filling into eggs. Top with green onion and paprika.
  • Serve with Creamy Hot Sauce on the side.

Notes

Any type of crab meat can be substituted for lump crab in this recipe.

September is creeping up on us, and you know what that means– Football Season! There is no better time of the year than Football Season for delicious party food. Wings, fries, sandwiches, chips and dip… when it comes to finger food, you’ve got a lot of firepower in your kitchen arsenal! Break out the napkins and let’s celebrate Football Season’s exciting parties with equally exciting finger food!

Football season here can be anything from my guy watching the game with a few friends or one good buddy to packing up the snacks and going to a potluck party. When we’re doing it up at home, I like to put out a variety of foods for snacking during the game.

Sneaking in a veggie tray or salad in a cup is not beyond my scope of snacks.
Of course wings are always a hit but can get a bit messy.
That doesn’t mean I need to rule out chicken. Chicken is so versatile and can lead to so many flavor combos. But I know everyone isn’t into buffalo or spicy flavors. So I thought I’d mix it up a bit.
Popcorn Chicken is a fun way to give everyone what they crave. Serve these delicious bites of chicken with some favorite sauces. Mix and match Ranch, Honey Mustard and Smoky Turmeric dipping sauces with your popcorn chicken for a wild flavor pop!

Popcorn Chicken 3 Ways

Ingredients

  • 2 lbs chicken breast cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 1/2 cups plain breadcrumbs
  • 1 packet dry ranch dressing seasoning mix
  • 1 packet dry Italian dressing seasoning mix
  • smoky turmeric seasoning
  • 1 teaspoon sea salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cumin
  • dip
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • oil for frying

Instructions

  • Place chicken in a large bowl with the buttermilk. Refrigerate and marinate for 30 minutes.
  • Divide breadcrumbs into 3 bowls. In one bowl, mix crumbs with ranch seasoning. One bowl with Italian seasoning.
  • Whisk together salt, sugar, paprika, turmeric, garlic, chili powder, cumin. Divide seasoning mix between last bowl of bread crumbs and a bowl with a mix of the mayonnaise and sour cream.
  • Heat oil to 350 degrees.
  • Drain chicken. Divide chicken into three sections. Coat chicken in crumbs and fry until golden brown and internal temperature reaches 165 degrees.
  • Serve with ranch dressing, honey mustard and smoky turmeric dipping sauce.
