When I was a kid, thermos soup was our hot meal choice. I was a big fan of chicken and stars but tomato was a close second.
Now children have access to microwaves and parents can purchase containers designed to transport and serve hot food for lunch.

Every kid I know, big and small loves mac and cheese. There’s a thousand ways, probably more to make this tasty dish. I think my favorite is Lobster Mac & Cheese. That might be a bit pricey for everyday lunch.

So I got to thinking about what else do kids like in their mac and cheese? How about meatballs?
Better yet, how do chicken meatballs with some veggies sneaked in sound to you? A little spinach, some celery and onion…yes that’s it!

Cheesy Chicken Mac #SundaySupper

Yield: 4 to 6 servings

Serving Size: 1 cup

Ingredients

  • 2 cups shells
  • meatballs
  • 1/2 pound ground chicken
  • 1/4 cup finely diced celery
  • 2 tablespoons diced onion
  • 2 cups baby spinach
  • 2 tablespoon olive oil divided
  • 1/4 cup breadcrumbs
  • 1 egg (optional)
  • cheese sauce
  • 1 1/2 cups milk
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • 2 tablespoons yellow mustard
  • 1 1/2 cups shredded cheese
  • salt and pepper to taste

Instructions

  • Cook pasta according to package directions. Drain.

  • preheat oven to 350
  • Saute celery and onion in 1 tablespoon oil until soft. Add spinach and cook until wilted. Set aside to cool.
  • In a large bowl, mix chicken, veggies (egg if adding) and enough bread crumbs to lightly hold mix together.
  • Divide into 18 mini meatballs. Brown meatballs in a large skillet in 1 tablespoon olive oil. (oven safe skillet is ideal)
  • Place meatballs in an oven safe pan. Cook at 350 for about 10 minutes until thoroughly cooked.
  • cheese sauce
  • While meatballs bake, add milk, cornstarch, butter, mustard, salt and pepper to a saucepan. Bring to boil over medium heat stirring constantly. Remove from heat when sauce thickens. Stir in cheese.
  • Combine pasta, meatballs and sauce. Serve.

Peanut Butter Oatmeal Cookies

Peanut Butter Oatmeal Cookies

Yield: 18 cookies

Serving Size: 1 each

Ingredients

  • 2/3 cups flour
  • 1 cup oats
  • 1/4 teaspoon salt
  • 1/3 cup shortening
  • 2 Tablespoons peanut butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 2 Tablespoons milk

Instructions

  • Whisk together flour, oats and salt.
  • Blend in shortening, peanut butter and brown sugar.
  • Dissolve baking soda in milk then fold into dough. Mix well.
  • Form dough into log approximately 2 inches in diameter. Wrap tightly in waxed paper and chill until firm.
  • Slice into 18 pieces and bake at 375 for 9 to 12 minutes. Cool slightly on cookie sheet before moving to wire rack.

August is just around the corner, and did you know? It’s National Sandwich Month! This week Sunday Supper pays tribute to the common sandwich. A simple meal made from a few fresh ingredients. Did I mention, it’s portable!

Tuna Bacon Salsa Wraps

I’ve worked in several delis over the years. Most customers came in for their favorite Reuben, Rachel, hoagie, ham and cheese or whatever they please. Hot or cold, dry or NY sloppy (cole slaw), sandwiches fill the midday hunger void.
I’m not big on wraps. The majority girls on of our campus eat wraps over bread by at least 2 to 1. I found these gluten free wraps by BFree Breads and I must say, they are pretty good. Especially with tuna salad and bacon salsa!

Yield: 2 wraps

Serving Size: 1 each

Ingredients

  • 1 can (5 ounce) tuna in water (chunk light or white)
  • 1 tablespoon diced celery
  • 1 to 2 tablespoons mayonnaise
  • salt and pepper to taste
  • Salsa
  • 2 medium red tomatoes, chopped (I like one red one yellow)
  • 1/2 cup diced pepper (bell or Hungarian sweet)
  • 1 slice of crisp bacon, crumbled
  • 1 tablespoon diced onion
  • 1 teaspoon chopped parsley or cilantro
  • 1 teaspoon lemon or lime juice
  • salt and pepper to taste
  • 2 large leaves of leaf lettuce
  • 2 wraps (I used BFree brand Quinoa and Chia Seed)

Instructions

  • Mix together tuna, celery, mayo and seasoning. Set aside.
  • Mix together tomatoes, bacon, peppers, onion, lemon juice, parsley, salt and pepper. Set aside.
  • Assemble wraps by adding a layer of tuna salad, lettuce then salsa to the wrap. Roll lightly, cut and serve.
