Meyer Lemon Chicken Picatta

I’m a big fan of spring. My favorite flowers come out of hiding. Purple dots of violets appear in the newly greened grass. Lily-of-the-Valley, lilacs, pansies, daffodils and tulips take turns putting on show of pastel colors and delicate scents.

Daylight isn’t as fast to disappear as snow and ice.

Fresh local veggies start to reappear at farmers markets and neighborhood stores. Time to start planning my own garden too!

I’m sure you’ve heard the phrase, “spring chicken” so a young tender chicken dish it will be! A dish with my favorite citrus of course, Meyer Lemon!

 

 

Meyer Lemon Chicken Piccata

Yield: 2 servings

Serving Size: 1 each

Ingredients

  • 2 skinless and boneless chicken breasts, pounded to 1/2-inch thickness
  • salt and pepper
  • All-purpose flour, for dredging
  • 1/4 cup butter
  • 1/4 cup olive oil
  • 1/3 cup fresh Meyer lemon juice
  • 1/2 cup chicken stock
  • 1/4 cup brined capers, rinsed
  • 1/3 cup fresh parsley, chopped

Instructions

  • Mix together flour, salt and pepper
  • Heat butter and oil over medium high heat
  • Dredge chicken in seasoned flour and add to pan. Brown on both sides. Remove chicken to plate.
  • Add Meyer lemon juice, chicken stock and capers to pan. Stir.
  • Return chicken to pan, add parsley and simmer until chicken reaches 160 and sauce thickens. Cover and remove from heat rest until chicken reaches 165.
  • Serve.

Spring Clean the Kitchen

Cook with at least 3 ingredients that are actually in your refrigerator or pantry right now. Try not to go to the store to buy anything new. Give tips on how to make a healthy dish out of whatever you have on-hand.
I’m a big shrimp fan. There is always a bag of shrimp in my freezer. I love them any way I can get them from deep fried to steamed. Slurping shrimp bisque, nibbling shrimp cocktail or a healthy stir-fry. Bubba Blue got nothing on me! Ha!

So when I found apricot preserves, horseradish and Dijon whole grain mustard in my fridge it had to be a shrimp dish! Sweet, tangy and oh so good! I know you’ll agree!

Spicy Apricot Glazed Shrimp

Spicy Apricot Glazed Shrimp

Yield: 4 servings

Serving Size: 4 ounces

Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 tablespoon vegetable oil
  • 1/3 cup apricot preserves
  • 1/2 teaspoon horseradish
  • 1/2 teaspoon whole grain mustard

Instructions

  • Heat oven to 350 degrees
  • Toss shrimp in oil and arrange as a single layer in a 9x13-inch casserole dish
  • Bake 10 minutes until pink and opaque
  • While shrimp bakes, whisk together preserves, horseradish and mustard.
  • Stir mixture into casserole dish and bake an additional 5 minutes until shrimp are thoroughly cooked and sauce starts to thicken.
  • Serve.

Spring in just around the corner. Literally, tomorrow! I’m so excited! Everyday brings more light, warmth and renewal. Flowers poking their heads through the ground, through the snow, stretching towards the growing light.

The entire earth participates. It is the Spring Equinox.

A fresh salad speaks to me. I hear those greens come a-calling just begging to be eaten. A boost of nutritious salmon and nutty Asiago makes my mouth water. Fresh, in season Meyer Lemons need to be everything. So of course these tart sweet treats are the star of the vinaigrette.

Flaked Salmon Arugula Spinach Watercress Salad

Yield: 1 each

Serving Size: 1 each

Ingredients

  • 3 ounces flaked salmon (canned or pouch)
  • 2 cups mixed greens (spinach, arugula, watercress)
  • 1 Tablespoon shaved Asiago cheese
  • Meyer Lemon Vinaigrette
  • 1 Tablespoon olive oil
  • 2 teaspoons fresh squeezed Meyer Lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon dried dill
  • salt and pepper

Instructions

  • Place mixed greens on a plate. Sprinkle with salmon flakes and cheese.
  • Whisk together oil, juice, dill, honey and salt and pepper. Drizzle over salad.
