Irish Amber Ale Pretzels bring soft, chewy goodness to the table. Rich with buttermilk and Irish Amber Ale. Skip the yeast. Ready in under 30 minutes!

Welcome to another addition of Bread Bakers! Today we’re getting our Irish on!

It’s hard to believe these soft, chewy pretzels are made with baking powder. I used a standard baking soda bath to produce that popular texture we all love in a soft pretzel.

Bob’s Red Mill Artisan Flour helped give these pretzels an out of this world texture! I used Smithwick’s Irish Amber Ale as the beer for these pretzels. Not too heavy and oh so flavorful!

I’ll make these pretzels again and again.

Irish Ale Pretzels

You have to have spicy mustard and an Irish Ale wouldn’t hurt either!


Irish Amber Ale Pretzels #BreadBakers

Yield: 12 pieces

Serving Size: 1 each

Ingredients

  • 6 cups water
  • 1/3 cup baking soda
  • 3 1/2 cups bread flour, divided (I use Bob's Red Mill Artisan Bread Flour)
  • 2 Tablespoons honey
  • 1 teaspoon salt
  • 1 Tablespoon baking powder
  • 6 ounces buttermilk
  • 6 ounces amber ale or lager, at room temperature
  • 1 egg beaten with water for egg wash
  • Coarse or Kosher or sea salt for topping pretzels

Instructions

  • Preheat oven to 400 degrees
  • Bring water and baking soda to a boil. Remove from heat.
  • In a large bowl, whisk together flour, baking powder and salt.
  • Mix buttermilk, ale and honey together, Add to flour mixture.
  • Turn dough out onto a lightly floured surface, and knead briefly.
  • Divide dough into 12 equal pieces. Roll each piece in a bit of flour and stretch into rope. Form into pretzel or twist shape.
  • Dip pretzels in baking soda water for a few seconds and then place on a silicone lined cookie sheet. Brush with egg wash and sprinkle with coarse salt. Bake until golden brown, about 15 minutes. Cool a bit on rack. Enjoy warm alone or with mustard or cheese sauce.

Fried Apple Pie

Fried Apple Pies you can eat on the go. Cradle these treats in your hands, bite into a flaky crust filled with sweet, cinnamon apples. Enjoy!

Welcome to #PiDay 2017! We’re a group of bakers who simply love pie. Do you love pies? Then you are in the right place!

Pi is defined as The ratio of a circle’s circumference to its diameter. Equal to 3.14159265358979323846… (the digits go on forever without repeating). Almost as many way we can enjoy pies.

I love pies! Fruit Pies filled with apples, strawberries, bluesberries, cherries and peaches.
Custard pies in banana, chocolate, or coconut cream. Pies piled high with whipped cream and meringue.

Ahhhh meringue. Meringue in lemon, lime, orange curds and fruit based pies like blueberry.

Today I wanted to keep it simple. A quick treat for anytime from breakfast to midnight snack.

Ready-to-use pie dough and fresh apple filling make these Fried Apple Pies your own creation. You are in control. Make your pies as sweet as you like. Fry these as dark as you like, and yes, ice your pies if you like!

Yield: 6 pies

Serving Size: 1 each

Ingredients

  • 2 tablespoons butter
  • 4 apples, peeled, cored, and sliced
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • One ready to bake pie crust
  • oil for frying

Instructions

  • In a medium saucepan, melt butter, add apples, sugar, cinnamon and lemon juice. Saute over medium heat until apples are soft and caramelized. Set aside to cool.
  • Unroll pie sheet. Cut into 6 circles or rectangles.
  • Fill each pie dough with about 1 tablespoon of filling. Wet edges with water and seal.
  • Heat oil to 375 degrees. Fry pies until golden brown, turning once. Drain on paper towels. Enjoy warm.

    Irish Corned Beef Style Brisket Dinner #bestbeef

    Irish Corned Beef Style Brisket Dinner uses corned beef spices to create an amazing braised brisket. Add cabbage, carrots and onions for a complete meal. This post is part of a campaign sponsored by Certified Angus Beef ® brand.

    I love traditional corned beef and cabbage. This recipe infuses those flavors throughout the beef and vegetables. I added boiled potatoes served with the broth. This meal tasted even better the second day!

    Remember to brown the beef to sear in all that flavor!

    Irish Corned Beef Style Brisket Dinner #bestbeef

    Yield: 8 to 10 servings

    Use a prepared corned beef brisket for a traditional recipe. Original recipe and tips found here on Certified Angus Beef ® brand website.

    Ingredients

    • 1 (3 1/2 to 4-pound) Certified Angus Beef ® beef brisket flat
    • 2 teaspoons ground coriander
    • 1 teaspoon caraway seeds
    • 1 teaspoon coarse ground black pepper
    • 1 teaspoon dried thyme leaves
    • 1/4 teaspoon ground clove
    • 2 tablespoons canola oil
    • 1 pound carrots, peeled and cut in 1-inch chunks
    • 2 onions, cut in 1-inch chunks
    • 6 peeled garlic cloves, cut in half lengthwise
    • 1/2 head cabbage, cut in 8 wedges
    • 4 bay leaves
    • 1 cup beef stock
    • 2 tablespoons coarsely chopped fresh parsley (optional)

    Instructions

    • Remove corned beef from package, rinse and pat dry; cut into two equal pieces.
    • Preheat oven to 325°F.
    • In a small mixing bowl, combine coriander, caraway, black pepper, thyme and clove; set aside.
    • Heat oil in a large skillet over medium-high heat. Sear brisket until browned, fat side down first, 3-4 minutes per side.
    • Transfer brisket to a large roasting pan or Dutch oven. Evenly coat all sides of brisket with spice blend. Spread carrots, onions, garlic, cabbage and bay leaves evenly around and on top, add stock and cover tightly with foil or lid. Place in oven and braise 2 hours until tender.
    • Slice thinly against the grain and serve with vegetables and broth, garnished with parsley.
