Fall Fruit Galette #FallFlavors

Fall Fruit Galette welcomes autumn with grapes, apples and pears wrapped in a oat graham chocolate chip cookie crust. Just a touch of cinnamon, almond and vanilla. Serve warm as is or topped with a dollop of whipped cream. The taste of fall in every bite.

I love desserts. The easier the better. Galettes sound intimidating until you make one. The easiest way is to buy a premade crust. Fill it with fruit and a sprinkle of cinnamon and sugar. But where’s the fun in that?

The crust for this galette takes crushed Nairin’s oat grahams with chocolate chips and adds a bit of flour and butter and an egg to make a soft dough.

Chill it, roll it out and fill it with fruit. Leave enough room to fold over the edges, about 2-inches.

Fold the edges over the fruit all the way around, overlapping slightly as you go. The dough will be soft. Use the parchment by lifting the paper and pressing the dough in place if necessary.

Bake and let cool just a bit before cutting.

Ingredients
  

dough

  • 1/3 cup crushed Nairin's oat grahams with chocolate chips about 4 crackers
  • 1 cup flour divided
  • 6 tablespoons unsalted butter, melted, cooled
  • 1 egg, beaten

filling

  • 1 cup firm apple, cored and thinly sliced
  • 1 cup ripe pear, cored and thinly sliced
  • 1 cup seedless grapes, halved
  • 2 tablespoons unsalted butter, melted, cooled
  • 2 tablespoons brown sugar I used Dixie Crystals
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla bean paste I used Taylor & Colledge
  • 1 teaspoon almond bean paste I used Taylor & Colledge
  • 1 tablespoon fresh squeezed lime juice

  • 1 egg beaten

Instructions
 

  • Mix together graham crumbs, 3/4 cup flour, egg and butter to form a soft dough. Add additional flour, 1 tablespoon at a time until dough is soft but not sticky. Form a ball, wrap in plastic wrap and chill until firm. Roll out dough between 2 sheets of floured parchment paper to about 12 inches round and 1/4 inch thick.
  • Arrange fruit slices in a circle in the center leaving about 2 inches of edge to fold over filling. Top sliced fruit with grapes,
  • Mix together butter, brown sugar, lime juice, vanilla and almond paste. Sprinkle over fruit.
  • Gently fold crust over edge of fruit. Fold up crust using parchment if needed then peel back paper. Brush crust with egg wash. Back at 350 degrees for 30 to 40 minutes until crust sets up baked firm and fruit is thoroughly cooked. Cool slightly before slicing.

Sweet Potato Pancakes #FallFlavors

Sweet Potato Pancakes serve healthy sweet potatoes in a popular breakfast treat. Add a touch of vanilla, almond, cinnamon and nutmeg and you have a great way to welcome fall.

I think orange when it comes to sweet potatoes. That isn’t the color of these tasty tubers. These light yellowish colored sweets remind me of yams I’ve seen. The taste is a bit milder than orange ones but just as good.

Servings 12 4-inch pancakes

Ingredients
  

  • 1 1/2 cups flour
  • 3 teaspoons baking powder
  • 2 tablespoons light brown sugar I used Dixie Crystals
  • 1 teaspoon cinnamon
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon nutmeg
  • 1 1/4 cups milk divided
  • 1 cup sweet potato puree I used Melissa's Produce
  • 2 eggs
  • 1/2 teaspoon vanilla paste I used Taylor & Colledge
  • 1/2 teaspoon almond paste I used Taylor & Colledge
  • cooking spray

Instructions
 

  • Whisk together flour, baking powder, brown sugar, Kosher salt, cinnamon, nutmeg
  • In a separate bowl, whisk together 1 cup milk, sweet potato puree, eggs, vanilla paste and almond paste. Add reserved milk a tablespoon at a time to reach desired consistency.
  • Lightly spray a griddle with cooking spray. Portion about 1/4 cup of batter per pancake for a 4-inch pancake. This is a thick batter and doesn't tend to spread. Fry over medium-high heat, about 2 minutes per side until browned and thoroughly cooked.

I scream, you scream, we all scream for ice cream! Well, maybe not scream, but definitely a big smile. Part of summer fun is going out for ice cream. Standing in line and running your eyes up and down the flavors board trying to decide on just one, or maybe two! 🙂 Wafer cone? Waffle cone? Cup? If you’re a purest you go there with those choices already made. I like to switch it up. Sometimes I crave something not on the menu. That’s when a simple ice cream recipe comes in handy. Making your own ice cream also allows you to control the intensity of flavor. Mint and chocolate go wonderfully together. I like to use a dark cocoa. You can use  either spearmint or peppermint extract. Both flavors work well. I always add a bit of vanilla whenever I make something with chocolate. No Churn Mint Chocolate Ice Cream

Servings 4 cups

Ingredients
  

  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup cocoa
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon mint extract
  • 2 cups heavy cream

Instructions
 

  • Whisk together sweetened condensed milk, cocoa, vanilla and mint. Whip heavy cream into stiff peaks. Fold whipped cream in small batches into condensed milk mixture. Pour into chilled container and freeze for 5 to 6 hours until firm.

If you never tried making mousse at home this recipe is for you. I’m a big fan of chocolate mousse. I love the creamy texture. Summer brings fruit into the picture. Early summer there are strawberries, mulberries and raspberries to pick. Mid summer blueberries make great desserts too. Berry Mousse Mixing berries adds fun flavor profiles to pies, ice cream and delicate desserts like this mousse. You can use fresh or frozen berries or a mix of both in this recipe. Ingredients
  

  • 2 cups heavy cream
  • 1/2 cup powdered sugar (I used Dixie Crystals)
  • 2 teaspoons vanilla
  • 2 cups fresh or frozen mixed berries (I used strawberries, blueberries, blackberries, raspberries mix)
  • 1 teaspoon sugar (I used Dixie Crystals)
  • 1 teaspoon unflavored gelatin

Instructions
 

  • In a cold bowl (the colder the better), whip cream, powdered sugar and vanilla together to form stiff peaks. Refrigerate.
  • Bring berries and teaspoon of sugar to a boil over medium heat. Whisk to dissolve sugar. Cook to soften berries to a pulp. Cool. Run pulp through a sieve to remove seeds if desired.
  • Set an empty bowl over a bowl of hot water. Mix gelatin with the 1 tablespoon of strained pulp juice over the hot water to dissolve. Add to the pulp. Mix.
  • Fold whipped cream into pulp.
  • Top portions with berries if desired.
