Smoky Skillet Chicken and Rice

I make a lot of skillet dinners. We love all-in-one meals. Sometimes I add rice or pasta. Other times meat and veggies does the trick. No matter what I’m cooking, its the seasoning that makes the meal.
My pantry is full of spices and I’m adding new ones all the time. I love to browse the spice aisle for ideas. McCormick spices and blends always offer great ideas.

Smoky_Applewood_BBQ_Chicken_with_Bacon

Smoky Applewood BBQ Chicken with Bacon Skillet Sauce has those bits of bacon, garlic, spices and natural applewood smoke already in there. You can use the sauce to whip up a quick and easy weeknight chicken dish with smoky bbq flavor. This sauce goes equally as well with pork or beef and gives baked beans a lift.

Since these sauces come completely seasoned just add your meat and vegetables. Easy BBQ Chicken and Rice skillet dinner ready in a matter of minutes!

I added sautéed celery and onion with the chicken for a bit of crunch.

Ingredients
  • 1 pound chicken breast cut into ½-inch sized pieces
  • ½ cup diced celery
  • ¼ cup diced onion
  • 1 Tablespoon olive oil
  • 3 cups cooked brown rice
  • 1 package McCormick Smoky Applewood BBQ Chicken with Bacon Skillet Sauce
Instructions
  1. Sauté chicken pieces, celery and onion in oil over medium- high heat until chicken is cooked (about 7-8 minutes).
  2. Mix in cooked rice.
  3. Stir in sauce. Thoroughly heat then serve.

This was a tough decision to choose a cheddar from all these great Cabot Creamery Cheeses.

I chose White Oak Cheddar. I’m glad I did. It melts perfectly. Cabot’s Legacy Cheddar cheeses aren’t oily but smooth and creamy. Slightly melting it made it spreadable. That quality is very handy when creating hand held snacks and sandwiches.

I love hand held snacks and appetizers. Informal gatherings with friends are best. Dipping snacks without a drippy mess is even better.

Cheddary Good Chicken Bites cradle delicate chicken pieces spiced up with horseradish rolled in a flour tortilla spread with cheddar goodness! Baked not fried or grilled. What is the dip, you ask? Hummus. I love garlic hummus but any kind will do! The cheddar blends perfectly with all these flavors. How could the recipe be anything but awesome!

Serves: 12
Ingredients
  • 6 ounces Cabot Cheddar, shredded (I used White Oak Cheddar)
  • 2 flour tortillas cut into 6 triangles each
  • 1 cup shredded chicken
  • ¼ cup sliced onions
  • ¼ cup vegetable oil, divided
  • 1 Tablespoon horseradish
  • salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Sauté chicken and onions in 1 Tablespoon of the oil.
  3. Brush remaining oil lightly over both sides of the triangles.
  4. Melt shredded cheddar for 10 seconds at a time in the microwave until softened. Divide evenly between 12 triangles (1/2 ounce cheese each) and spread with a knife.
  5. Stir horseradish, salt and pepper into chicken and onions. Divide mixture between triangles.
  6. Gently fold over and tuck point underneath.
  7. Place on baking sheet and bake for about 5 minutes until tortilla begins to brown and cheese melts.
  8. Serve warm or room temperature with your favorite hummus.

Start Smoking in the New Year!

The New Year is heating up with smoke and spiciness. From boldly flavored smoked salts to actual smoking techniques, subtly smoked food is on-trend. The same can be said for spice as we savor heat from harissa, sriracha and smoked paprika. Show us the healthy dish you’re heating up with smoke and/or spiciness.

I’m not one for spicy food. Smoky flavor however, I enjoy.

There are several ways to introduce smoke flavor into foods. I smoked ribs on the flat top grill one place I worked by simmering water under the meat with liquid smoke. I’ve used pressure cooker type smokers and wood chips. Outdoor smokers work great. You get better results in the summer here in PA though than in January!

I felt the best way to keep from risking frostbite was to impart the flavor of smoke by adding already smoky foods. A bit of smoked paprika and smoked almonds give this Paprika Chicken Salad zing! Sun-dried tomatoes add a tinge of sweetness and depth.

Ingredients
  • 2 cups cooked chicken, chopped
  • ¼ cup sun-dried tomatoes, chopped (reconstituted in ½ cup water)
  • ¼ cup chopped celery
  • 2 tablespoons smoked almond pieces
  • 1 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • ⅛ teaspoon smoked paprika
  • ½ teaspoon honey
  • salt to taste
Instructions
  1. Soak tomatoes in water for 30 minutes. Drain and reserve liquid.
  2. Mix chicken, tomatoes, celery, and almonds together.
  3. In a separate bowl, whisk together vinegar, oil, paprika, honey and salt.
  4. Add dressing to chicken mixture. Add a bit of the reserved water to moisten as necessary.
