Hi! Welcome and thanks for joining us as we Fill the Cookie Jar with some of our favorite Thanksgiving cookie ideas!

When I think about Thanksgiving food, harvest comes to mind. Now how was I going to apply that to cookies?
Grains are the star of harvest time. Wheat stripped from the shaft and piled high ready to grind into wholesome flour. Nuts of all kinds, fruits like cranberries and apples ready to dry and preserve too, of course.
These cookies are made with whole grain cereal, dried cranberries, walnuts and some chocolate chips. Oh yeah, there’s cinnamon in there because its Fall after all!

Flavor packed cereal cookies have a chewy texture. These cookies make a great breakfast treat! Add a glass of milk and some juice.

Or even take some cereal cookies along for breakfast on the go!

Ingredients
  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • 1 egg
  • ½ cup milk
  • 1 cup flour
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon salt
  • 1½ cups cereal (Uncle Sam’s, Wheaties, Total)
  • 2 teaspoons cinnamon
  • ½ cup dried cranberries
  • ½ cup chocolate chips
  • ½ cup chopped walnuts
Instructions
  1. Cream butter and sugar together. Mix in egg. Stir in milk.
  2. Sift together flour, baking soda, cereal, cinnamon and salt. Add to creamed mixture. Stir in cranberries, chocolate chips and walnuts.
  3. Chill dough for 30 minutes.
  4. Drop by teaspoonful onto parchment cookie sheet and bake at 350 for about 10 minutes. Cool and enjoy!

I can eat peanut butter as a spread, baked in recipes like Peanut Butter Donuts with Chocolate Icing or Chocolate Marshmallow Peanut Butter Stuffed Donuts and then I make Peanut Butter Brownies and can’t forget the Peanut Rolled Egg Candy and of course homemade honey peanut butter.
For today’s event I decided to make my Mom’s homemade Peanut Butter Potato Candy. This recipe was my Gram’s and my Mom made it every Christmas as part of her homemade candy line up.
Cooked potatoes add the starch and moisture to hold the candy dough together. Russets are a good choice for this recipe.
I peel and cook the potatoes on top of the stove. Drain well.
I also like to work on a silicone mat when it comes to sticky dough. Remember to have some extra powdered sugar on hand to dust the pin and mat or waxed paper that you roll out the dough on.
Form a rectangle about 1/4 to 1/2 inch thick.

Spread with creamy or crunchy peanut butter. I use homemade or a good quality all natural brand.

Roll up the candy into a log. I like to wrap the log in waxed paper. Refrigerated for at least 2 hours or overnight before slicing.

You can also roll pieces of the dough into balls and roll it in a mixture of powdered sugar and cocoa. Two parts sugar to one part cocoa.
The following recipe is more of a guideline that a recipe. Either way I know that you will find this candy delicious.

Ingredients
  • 2 medium potatoes, peeled cooked and drained
  • 1 2 lb bag of powdered sugar plus extra for rolling out dough
  • 1 cup peanut butter
  • milk as needed
Instructions
  1. Mash potatoes or use a ricer.
  2. Add sugar slowly to form a stiff dough.
  3. Add milk a little at a time if too dry.
Notes
The moisture from the potatoes can vary greatly.

Bacon and Potato Hash #WeekdaySupper

Bacon and Potato Hash
Three kinds of potatoes (red, Yukon gold and sweet potatoes) complimented with chunks of smoky bacon, make this hash dinner a winner!
If you like breakfast for dinner, (some call it “brinner”)hash should be on your agenda.
It’s all in there. You have potatoes, bacon and eggs in one pan. Add onions and peppers if you like. Cheese works too. Sometimes I do, depends on what is on hand.

Ingredients
  • 2 cups chopped red potatoes
  • 2 cups chopped Yukon gold potatoes
  • 2 cups chopped sweet potatoes
  • 6 ounces bacon cut into 1½-inch pieces
  • 2 eggs, beaten
  • 1 teaspoon granulated garlic
  • ½ teaspoon Smoked Paprika
  • Salt and pepper to taste
Instructions
  1. Brown bacon in a large skillet. Add potatoes, garlic, smoked paprika, salt and pepper. Add a bit of oil or water if needed to keep potatoes from sticking.
  2. When potatoes are softened, add eggs. Reduce heat to low and stir to coat potatoes and bacon. Continue to cook until eggs are set.

Lightened Up Cornbread Stuffing #SundaySupper

This week the Sunday Supper group is tackling those calorie-laden, heavy Holiday meals with lightened up recipe versions.

Cornbread Stuffing is one of my favorites. The problem is that I love it with a ton of butter and a bit on the sweet side.

There were two ways that I could think of to cut back on the fat and calories. First, I needed to adjust the cornbread. Next the stuffing needed to be moist without all that extra butter.

I exchanged the whole milk for 2 percent, cut the sugar in half and cut back a bit on the oil in the cornbread.

For the stuffing, I used chicken broth in place of milk and added the oil back into the mix. This stuffing turned out moist enough that I didn’t miss the extra butter.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup flour
  • 2 Tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup 2 percent milk
  • 1 egg, beaten
  • 3 Tablespoons vegetable oil

  • 1 cornbread
  • 1 cup chopped celery
  • ½ cup chopped onions
  • ½ to ¾ cup chicken broth
  • ½ cup toasted pecan pieces
  • 2 Tablespoons butter
  • 1 tablespoon vegetable oil
Instructions

  1. Mix together cornmeal, flour, baking powder, salt. In a separate bowl, mix milk, egg and oil. Mix dry and wet ingredients. Pour batter into a greased 8x8-inch pan. Bake at 425 until golden brown, about 20 to 25 minutes.
Stuffing
  1. Crumble cornbread into a large bowl. Saute celery and onions in butter until softened. Add vegetables, oil and pecans.
  2. Add enough broth to moisten to desired consistency Bake at 350 until thoroughly heated.
