Sweet Potato and Quinoa Casserole
I’m so excited to be sharing my Sweet Potato Quinoa Casserole today with you at Take a Bite Out of Boca ! Shaina has such great tips and tasty recipes. We belong to some of the same foodie groups online and even met in real life this past summer at the Food and Wine Conference in Florida!
This casserole is packed with nutrient dense sweet potatoes and quinoa with a few toasted pecans thrown in to add a bit of crunch. It’s perfect to welcome in fall. So colorful and festive!

Chicken Quinoa Skillet Dinner

Busy days and busy nights make me wish for quick after work meals. Chicken Quinoa Skillet Dinner to the rescue!  Chicken, quinoa and brown rice blended with colorful veggies make a healthy, eye-catching skillet dinner your family will love!
Add quick-cooking veggies like zucchini, carrots and onions for a complete meal.

Ingredients
  • ½ pound chicken breast cut into 1-inch pieces
  • 1 cup cooked brown rice
  • ½ cup quinoa
  • 2 cups chicken broth, divided
  • 1 cup zucchini
  • ½ cup shredded carrots
  • ½ cup roasted red peppers, chopped
  • ½ cup onion, chopped
  • ¼ cup Moscato wine or white wine or additional broth
  • 1 Tablespoon white wine vinegar
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
Instructions
  1. Bring 1¼ cups of broth to a boil. Add quinoa, cover and reduce heat. Simmer for approximately 15 minutes until kernels pop and are chewy and tender.
  2. While quinoa cooks, saute chicken, zucchini, carrots, onion, thyme and red peppers in remaining broth and wine until chicken is thoroughly cooked.
  3. Stir in rice, cooked quinoa and vinegar. Salt and pepper to taste.

Peanut Butter Chocolate Iced Cake Donuts

Peanut Butter and chocolate are the perfect pair. Put these ingredients in a donut and you have a little slice of Heaven. Use My Sweet Mercy baking mix and you’re donuts will be irresistible!
For those who missed my Grown Up Chocolate Chip Cookies post, here is the backstory. This baking mix is a lifesaver. Literally. That’s the story behind My Sweet Mercy.
For Robyn Heirtzler, baking became a passion that helped her work thorough some of her darkest moments while dealing with depression. Now she is passing some of her strength on to others by donating part of the proceeds from her baking mixes to help others worldwide.
Robyn so graciously sent me a package of her Vanilla Baking Mix to try.

Peanut Butter Chocolate Iced Cake Donuts

Serves: 9 donuts
Ingredients
  • 1¼ cup vanilla baking mix
  • 1 egg
  • ¼ cup peanut butter
  • ¾ cup condensed 2 percent milk
  • ½ cup brown sugar
Instructions
  1. Lightly spray a donut pan with cooking spray or apply a light coating of oil with a paper towel.
  2. Place baking mix into a medium-sized bowl.
  3. In another bowl, mix together milk, egg, peanut butter and brown sugar. Fold wet ingredients into baking mix.
  4. Fill donut cups about ⅔ of the way full. I put the dough in a pastry bag or zip bag with the corner cut off to squeeze dough into pan. Bake at 325 for 10 to 12 minutes until donuts spring back under slight pressure.
  5. Cook in pan a few minutes then transfer to a wire rack to cool completely.
