Honey Thyme Chicken
What do you think of when you hear the term, “unprocessed foods”?
Andrew Wilder, an unprocessed foods proponent calls it using “The Kitchen Test”. “Unprocessed food is any food that could be made by a person with reasonable skill in a home kitchen with whole-food ingredients.” No refined sugar or flour for example.
I chose to make a simple chicken dish. Instead of frying in oil (which is processed) I quickly brown the chicken over high heat in a little homemade broth then simmer in the honey thyme sauce.

You can serve this Honey Thyme Chicken as an entree or by itself as an appetizer. The reduced sauce lightly coats the chicken.

Ingredients
  • 1 lb chicken breast pieces
  • 1 cup homemade chicken broth divided
  • 2 tablespoons raw honey
  • 1 teaspoon dried thyme
  • sea salt to taste
Instructions
  1. Place ¾ cup broth, honey and thyme in a small saucepan. Simmer over medium heat, whisking constantly until reduced by about ½.
  2. Brown chicken in ¼ cup broth over high heat for 1 to 2 minutes.
  3. Pour sauce over chicken and simmer until chicken reaches 160 degrees.

My Shrimp and Chicken Angel Hair Pasta fits the bill. Instead of sauce I infuse flavor into the shrimp, chicken and pasta. This method replaces heavy coated noodles with a light coating of cooking liquid. A little pasta water added to the mix will thicken those delicious juices.
This dish satisfies you without that “stuffed after leaving the table” feeling.
You can cook the shrimp, chicken pieces and aromatics in the time it takes for the pasta water to boil. Start to finish this recipe is ready in about 20 minutes.

Shrimp and Chicken Angel Hair Pasta

Serves: 4 servings
Ingredients
  • ½ lb Angel Hair Pasta
  • ½ lb large shrimp peeled and deveined
  • ½ lb chicken breast cut into 1-inch pieces
  • 1 shallot finely chopped
  • 1 clove garlic, minced
  • 1 Tablespoon olive oil
  • ½ cup chicken broth
  • juice of ½ lemon
  • 2 Tablespoon white wine vinegar
  • ¼ cup roasted red peppers
  • 1 Tablespoon fresh dill, chopped
Instructions
  1. Cook Angel Hair Pasta according to package directions. Reserve liquid.
  2. While water is heating, saute shrimp, chicken, shallot and garlic in oil for 2 minutes in a large skillet. Add broth, lemon juice, vinegar and peppers. Simmer about 4 minutes longer until shrimp is pink and opaque and chicken is thoroughly cooked.
  3. Add dill and cooked pasta. Toss. Add pasta water as needed to help thicken sauce. (about 2 to 3 Tablespoons)

Pumpkin Bars are easy, fast and very appropriate for this month’s Fill the Cookie Jar . Each month we make cookies with a theme then post it on the first  Thursday of the month.  If you love cookies and would like to join us, click on the button below.

We had a choice of Halloween Cookies or something pumpkin. I decided to join in the fun a little late to decorate spooky cookies. so pumpkin it is! These bars taste like warm, spicy pumpkin pie bites! They are just as good cold.

Ingredients
  • 1 cup graham cracker crumbs
  • 2 Tablespoons unsalted butter, melted plus more to grease dish
  • 1 egg
  • ⅓ cup brown sugar
  • ¼ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ cup plus 2 Tablespoons evaporated 2 percent milk
  • ½ teaspoon vanilla
  • ¼ teaspoon salt
  • ¾ cup pumpkin puree
Instructions
  1. Mix graham crumbs and butter together. Press into bottom of well-buttered 8x8-inch dish. Bake at 375 for about 5 minutes until crumb crust firms and slightly darken.
  2. While crust bakes whisk together remaining ingredients. pour and smooth mixture over crust.
  3. Bake 15 to 20 minutes until custard is firm and set in the middle.
  4. Cool on wire rack for several minutes. Cut into squares and serve. Refrigerate any leftover bars .
