When I think, “picnic” I think about already prepared food. A cooler packed with a ton of different goodies bound for a quiet, peaceful spot. Since no one but family or a few friends will be there its okay to eat chicken with your fingers! Especially wings.
Wings don’t need to be covered in gooey sauce to be good. That’s a plus to help keep the ants away and cut down on the Wetnaps!
These Garlic Parmesan Wings are super easy to make without egg or dipped in oil. My secret is sweet rice flour.
I found this out by accident when I tried experimenting with gluten-free breading options. Dipping chicken in flour first is part of a normal dredge. Flour, egg or milk, crumbs. The flour adds gluten that helps keep the breading on the chicken. So to do a good job of keeping wings coated and get a nice, crunchy skin I needed something with a high starch content. That’s where the sweet, also known as sticky rice came into play.
If you are unfamiliar with sweet rice or sweet rice flour, its actually a specific grain that is used in sushi for exactly that binding quality it contains. Safe for gluten-free diets, sweet rice flour is an excellent thickening agent for soups, stews and sauces.

It makes great garlic Parmesan Wings too!

Ingredients
  • 6 to 8 chicken wings
  • ¼ cup sweet rice flour
  • ¼ cup Parmesan cheese
  • 1 teaspoon granulated garlic or garlic powder
  • ¼ teaspoon smoked paprika
  • salt and pepper to taste
  • cooking spray
Instructions
  1. Preheat oven to 375 Spray a baking sheet with cooking spray.
  2. Mix together rice flour, cheese and spices.
  3. Roll wings in mixture and place on cooking sheet. Lightly spray the top of the wings.
  4. Bake for approximately one hour (internal temp 165) turning wings over about half-way through cooking process.
  5. Wings will be crisp not bubbly but if you like them browner, broil for about 30 seconds after wings are cooked.

Cherry Cheese Streusel Cake

Sweet, ripe dark cherries are finally in season! I’m planning a lot of cherry goodness over the next few weeks. First on the list is Cherry Cheese Streusel Cake.

If you follow my blog, I’m sure you have heard me share my childhood stories of living in a neighborhood of fresh fruit free for the picking. Back roads were lined with wild raspberry bushes and Mulberry trees. Neighbors had peach, apple and pear trees. One neighbor had a strawberry patch for a few years. Not far from the coal processing plant an apricot tree grew providing enough apricots for us and the groundhogs. But that’s another story.
I still haven’t mentioned my favorite. A special tree where dark, sweet cherries grew. The tree was always loaded with cherries and us kids hung out under it on many a hot summer day.
The owner didn’t mind as long as we obeyed the rules. We could have any cherries on the ground or what we could reach without climbing. Sounded fair then, it still sounds right now.

This cherry coffee-style cake starts with buttery-rich cake on the bottom of layer. Patches of sweetened NeufchĂ¢tel cheese dot the batter. Then add the stars of the show, dark sweet cherries. Sprinkle a streusel crumb topping with pecans over all that goodness. Hello summer!

Ingredients
Streusel
  • ¼ cup flour
  • 2 Tablespoons sugar
  • 2 Tablespoons light brown sugar
  • 2 tablespoons cold butter
  • ¼ cup chopped pecans
Filling
  • 4 ounces Neufchatel cheese, softened
  • ¼ cup sugar
  • 2 cups pitted cherries
Cake
  • 1¼ cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 6 Tablespoons unsalted butter
  • ⅔ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ¼ teaspoon almond extract
  • ⅔ cup low-fat milk
  • 2 Tablespoons almond milk
  • baking spray or grease and flour for pan
Instructions
Streusel
  1. Combine flour and sugars. Cut butter into mix, working in small pieces at a time to form crumbs. Add nuts, set aside.
Filling
  1. Cream together cheese and sugar, set aside.
Cake
  1. Mix together flour, baking powder, salt. separately, whisk together milks, egg and extracts.
  2. In a medium-sized bowl, cream together butter and sugar.
  3. alternate wet and dry ingredients to form batter.
  4. Place batter into a well-greased 8x8-inch or 9x9-inch pan.
  5. Dot with creamed cheese mixture.
  6. Add cherries. Top with streusel.
  7. Bake in preheated 350 degree oven until inserted toothpick in cake comes out clean and cake and topping brown. (about 45 minutes)
  8. Serve warm or cold.
Notes
Only use the coldest butter possible for streusel to get the best crumbs. Keep topping in freezer until you're ready to assemble cake.

I know that it can be a challenge trying to cook healthier meals for your family. There’s times when I really want that extra flavor from chopped bacon in my pasta. I know, that’s okay. Part of eating healthier is knowing how to curb the urge to add more fat than I really need. Acquiring skills to change family favorites and go-to meals into more healthful dinners is a learning process.
A few years ago I participated in a program to teach low-income families how to shop for healthier alternatives like brown rice, properly store fresh fruits and veggies and prepare meals within their budget.

Here are some pointers I gave to them that can be applied towards creating healthier meals.

  • A general rule to keeping food fresh is buy what only what you need or store bulk purchases properly. Break larger portions of packaged meat into individual meals and freeze separately.
  • Try to buy local produce when possible. Wash fresh produce when you are ready to use it. Storing wet produce may promote bacterial growth and spoilage.
  • Choose leaner cuts of meat and ground beef whenever possible. Trim away some of the excess fat from pork roasts and chops.
  • Oven bake family favorites instead of frying. A light coating of oil on chicken or potatoes gives the flavor of fried without all the calories.
  • Introduce your family to one new food at a time. Try making an old favorite dish like spaghetti and meatballs with ground chicken or a fresh tomato sauce instead.
  • Sneak healthy greens like spinach and kale into soups, stews and casseroles.

I’ve found that the bottom line is if tastes good, my family will eat it!

Ingredients
  • 2 cups shredded cooked spaghetti squash
  • 1 cup sliced mushrooms
  • ¼ cup diced green onions
  • 1 cup baby spinach
  • 2 cloves of garlic, minced
  • ½ cup white wine, gluten-free*
  • 1 cup vegetable broth, gluten-free*
  • ¼ cup chopped blanched or toasted almonds
  • 1 Tablespoon olive oil
  • ½ teaspoon red pepper flakes
  • Salt to taste, optional
Instructions
  1. Sauté mushrooms, onion and garlic in oil until tender.
  2. Add broth, wine, spinach and squash. Cook until thoroughly heated and most of the liquid evaporates.
  3. Add red pepper flakes,nuts and salt if needed.
Notes
*Some wines are processed in oak barrels where gluten is added as a binding agent. Vegetable broth can contain gluten as a thickener. Read labels carefully if you are intolerant.
