Shrimp Salad with Lemon Basil Dressing #SundaySupper

Summertime means time for outdoor fun. Turn the oven off, fire up the grill. Eggs are a big part of my summer meals. From quick, light dinner salads to potluck potato salads and ice cream. Food safety is always a concern of mine.

One of my favorite ways to use eggs is in salad dressings. Since salads are such a big part of my summer meals, I’m always looking for new combinations. I love the taste of fresh basil and lemon. Together they make a smashing good dressing for my favorite salad protein, shrimp! Using pasteurized eggs takes the worry about Salmonella out of my creamy style dressings. Of course I keep normal food safety precautions for prep, transport and storage in mind.

Keeping meals simple in summer frees up more time to enjoy the best seasonal activities. Toss cooked shrimp in the Lemon Basil Dressing. Serve on a bed of greens with your favorite garnish. I added red pepper slices and tomatoes. Drizzle with dressing and serve!

Lemon Basil Shrimp Salad Dressing Ingredients

Shrimp Salad with Lemon Basil Dressing

Ingredients
  • 1 lb cooked shrimp
  • 1 5-ounce bag mixed greens
  • 1 ripe tomato, wedged
  • 1 red pepper, cut into strips
Dressing
  • 4 Davidson's Safest Choice Eggs
  • 2 Tablespoons chopped fresh basil
  • 1 clove minced garlic
  • 1 Tablespoon fresh squeezed lemon juice
  • 3 Tablespoons honey
  • 1 teaspoon champagne vinegar
  • 1 cup olive oil
  • 1 tsp lemon zest
  • salt and pepper to taste
Instructions
  1. Arrange greens, tomatoes and pepper pieces on a salad plate.
  2. Place dressing ingredients in a blender. Puree about a minute until egg and oil emulsifies.
  3. Place shrimp in a bowl. Drizzle with dressing. Stir to coat.
  4. Place shrimp on salad.
  5. Drizzle salad with remaining dressing.

I love eggs!

Fried, poached, scrambled you name it, if its an egg I’m there.  My wheels started turning with all the possibilities pasteurized in-shell eggs could offer.
I especially like my eggs on the soft, dippy-side. A lightly fried sunny-up, easy over, soft poached or soft boiled egg can add richness to a pasta dish, salad, or in this case, a burger.

You can easily make this turkey burger as a patty and top it with an egg.

I liked the idea of making a burger nest for my golden egg deliciousness!
I started by making an arugula pesto. You can use any green. I’ve used spinach and even watercress!

Next, I added a little to the turkey.

Formed it in a ball and shaped it with a spoon.

When you see juices rise to the top, it is time to flip it.

When the burger is thoroughly cooked, here comes the best part!

Crack a Davidson’s Safest Choice Egg into the burger nest!

Carefully flip it over and cook your egg as desired. The burger holds the heat in, so it takes about as long to cook your egg as if you just pan cooked it. You can also top a patty of your choice with an egg cooked your way! Try it with beef or sausage too.

Ingredients
  • ¼ lb ground turkey
  • 1 Davidson’s Safest Choice Egg
  • 1 burger bun
Arugula Pesto
  • 1 cup fresh arugula
  • 1 clove garlic
  • 1 tablespoon Parmesan cheese
  • 1 teaspoon olive oil
  • salt and pepper to taste.
  • spray oil for frying
Instructions
  1. Finely grind arugula, garlic, cheese salt and pepper in a food processor. Drizzle in oil and process into a pesto paste.
  2. Add 1 tablespoon of pesto to the turkey.
  3. Spray a pan with cooking oil. Form turkey into a ball. Press into a "nest" with a spoon or cook as a patty if desired.
  4. When juices rise, flip burger. cook thoroughly.
  5. Break a Davidson’s Safest Choice Egg into the pocket. Flip and cook as desired.
  6. Spread additional pesto on the bun. Top with arugula if desired!
  7. Enjoy!
