Mixed Greens with Hot Bacon Dressing used to be dandelions with hot bacon dressing when I was growing up. At the crack of dawn on Easter morning I’d be out in the yard picking dandelions before the flowers opened for the day. Tender baby greens, not too bitter. closed buds were okay too.
It was safe back then to eat things out of your yard. Dandelions, violets, purslane, raspberries, wild strawberries and so on. The point is that we didn’t use chemicals to kill weeds. Yes, some people in the neighborhood did. That was fine then, we weren’t in the habit of foraging the neighbors’ yards. Especially not on Easter unless I was invited to an egg hunt!
Today you can buy dandelion at some stores and farmers markets. There is just something about buying dandelion that I can’t quite get use to doing. Lucky for me, we like arugula or mixed baby greens just as well.
Hot bacon dressing is a PA Dutch thing as far as I know. My ancestors on my Mom’s side spoke PA Dutch and really loved their Wos-Wit homemade or store bought.
This hot bacon dressing is very rich. Its sweet and sour bite gets an extra kick from salty bacon. A little goes a long way. Its okay to indulge once a year, right? 😉 If you have any guilt, just send me your leftovers!

As a side note this dressing can be made without bacon by using all butter instead of bacon fat.

Mixed Greens with Hot Bacon Dressing

Ingredients
  • ½ cup bacon grease
  • ½ cup apple cider vinegar
  • 3 cups of mixed greens washed and drained
  • 6 thick slices of bacon cut into pieces
  • 2 Tablespoons butter
  • 2 eggs, beaten
  • 1 Tablespoon sugar or to taste
  • Salt and pepper to taste
Instructions
  1. Fry bacon in a medium-sized skillet over medium-high heat until crisp. Remove bacon pieces, set aside.
  2. Reduce heat to low. Add butter. Slowly heat to warm.
  3. In a separate bowl, combine eggs, vinegar, sugar, salt and pepper. Add a little at a time, stirring constantly into the butter cream mixture. Increase heat and cook until thickened.
  4. Add cooked bacon, stir. Pour over greens and serve immediately.

Roasted Garlic Chicken Pizza Pockets #NationalGarlicDay

Garlic rules my kitchen. No other ingredient comes close to being number two. So when Heather from girlichef.com invited me to join her and a group of friends to celebrate National Garlic Day by sharing recipes and an awesome giveaway, I said,”Where do I sign up?”
It turned out that I could stay in my kitchen and join in the festivities from home.
That is a good thing because that is where I keep my stash. I do use quite a bit but I still try to grow most of my own crop.

Depending on the time of year, you can find this bulb growing in my garden, overwintering, drying in sun room, or resting as dry storage above the potato bin.

One of my favorite ways to use garlic is to roast it. If you never tried roasting a bulb, it is very easy. Just cut off the stem end down to where the cloves are peeking out. Drizzle with olive oil. Wrap tightly in foil and roast at 350 for about 30 minutes. It is done when it turns soft and golden brown. Your kitchen will smell wonderful! I wonder if there is a way to bottle that smell. Hmmm.

Sorry I was daydreaming for a minute! Anyway, when you are ready to use it, squeeze the bulb and the roasted cloves will slide out. It will keep several days refrigerated as is wrapped in the roasting foil. I made extra and enjoyed some in mashed potatoes and later with spaghetti.

Roasting garlic draws out the bulb’s sweetness. Remember since it is a bulb, it basically holds the plant’s food in the form of sugar. Same thing with onions. Caramelized onions taste so different than in their raw state. Delicious, right?

These Roasted Garlic Chicken Pizza Pockets combine so many of my favorite ingredients in one handy meal. This is an easy meal you can prepare ahead for weekday dinner or use as a quick meal on a busy weekend. Did I mention caramelized onions are in here too? 🙂 Enjoy!

Roasted Garlic Chicken Pizza Pockets #NationalGarlicDay

Ingredients
  • 1'2 pound chicken breast cut into bite-sized pieces
  • 1 bulb roasted garlic (entire bulb not just a few cloves)
  • 1 medium onion, chopped
  • 3 Tablespoons butter
  • 1 Tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 cup shredded mozzarella or pizza blend cheese
  • ½ small pizza dough round, purchased or homemade
sauce for dipping
  • 1 28-ounce can crushed plum tomatoes
  • ¼ cup finely diced onion
  • 2 tablespoons minced garlic
  • 1 tablespoon dried oregano
  • salt and pepper to taste
Instructions
  1. Add butter, oil, chicken and onions in a large skillet. Saute 2 minutes then squeeze in roasted garlic and rosemary. Cook until chicken is done and onions caramelize, about 5 minutes.
  2. Cut dough into 4 pieces about 2x4-inches each. Roll out into a rectangle like a Stromboli.
  3. Divide chicken mixture between dough pieces. sprinkle with cheese.
  4. Fold over edges and seal. Add s few slits on top to let out steam.
  5. Brush tops with leftover buttery pan drippings. Too good to waste!
  6. Spray a pizza pan or sheet pan lightly with cooking spray. Bake at 450 for about 15 minutes until tops are brown and cheese is melted.
  7. While pizza cooks make sauce. Add sauce all ingredients to a medium-sized sauce pan and cook over medium heat, whisking frequently until tomatoes are broken down, vegetables are cooked and sauce thickens, about 15 minutes.
  8. Or serve with your favorite pizza sauce.

Crab Louie Stuffed Chicken #SundaySupper

Crab Louie also known as Crab Louis is one of my favorite crab dishes. Traditional Crab Louis is made with Pacific Northwest Dungeness Crab. I use lump crabmeat and sometimes even special.

I usually make this as a salad and stuff a tomato with it. This week’s Sunday Supper invited us to stuff, roll and wrap our dinner contribution. The stuffed tomato version is a great lunch or brunch meal. I needed to kick it up a notch for dinner. Stuffed chicken sounded like a natural choice. Moist lump crabmeat in a slightly sweet and spicy sauce, cradled in a chicken breast and baked.
It turned out to be a great choice!
Fill breasts and tuck ends underneath, Add oil to baking dish. Place breasts stuffed side down. Season with salt, pepper and paprika. Sprinkle with onions.

Ingredients
  • 2 4-ounce chicken breasts pounded flat (approximately ¼-inch thickness)
  • 1½ cups lump crabmeat
  • ¼ cup plus 1 Tbsp. diced green onions
  • ½ cup reduced-fat mayonnaise
  • ½ cup low fat sour cream or Greek yogurt
  • 1 Tablespoon chili sauce
  • ½ tsp. Worcestershire sauce
  • ½ tsp. lemon juice
  • ⅛ tsp. hot sauce or to taste, optional
  • ½ tsp. smoked sweet paprika
  • 2 Tablespoons olive oil
  • salt and pepper to taste
  • 2 cups baby arugula (optional)
Instructions
  1. Combine mayo,sour cream, chili sauce, Worcestershire, lemon juice and ¼ cup onions. Fold in crabmeat.
  2. Fill breasts and tuck ends underneath, Add oil to baking dish. Place breasts stuffed side down. Season with salt, pepper and paprika. Sprinkle with onions.
  3. Bake at 350 until internal temperature of chicken reaches 160 about 20 minutes.
  4. Serve on a bed of arugula, over noodles or alone if you prefer.
