My Mom used to say the same thing every year around this time, “Spring is sprung, the grass is ris. I wonder where the birdies is!” I’m not sure where the birdies are today, but I know the Sunday Supper Movement has spring on its mind!

Nothing screams, “Spring is here,” like strawberries and rhubarb. These beauties both appear locally starting in early spring and fade away by the time the heat of summer takes over.
The family next door to us when I was little, used to grow rhubarb plants with the leaves getting big enough to wrap around yourself. I was skinny, but still.
If you know anything about rhubarb, its probably that it has a refreshing but tart taste. As good as it is I can’t eat it alone. It needs a bit of sugar.

I knew exactly what to make. Strawberry Rhubarb Upside Down Cake! I knew I wanted moist, spongy cake topped with gooey, buttery brown sugar glazed fruit.

I’ve made all kinds of fruited Upside Down Cakes but never this combination. Hey, its spring. Time to try new things!

Strawberry Rhubarb Upside Down Cake

Ingredients
  • ⅓ cup unsalted butter, melted
  • ½ cup light brown sugar, packed
  • 1 cup rhubarb, cut into ¼-inch pieces
  • 1 cup sliced strawberries
  • 2 eggs
  • ⅔ cup sugar
  • 6 Tablespoons orange juice
  • 1 teaspoon vanilla
  • 1 cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
Instructions
  1. Place rhubarb pieces in a 1 quart saucepan and add just enough water to cover. Bring to a boil and cook about 1 minute only long enough to soften. Drain.
  2. Pour melted butter into an ungreased 8-inch cake can. Sprinkle with brown sugar.
  3. Arrange strawberry slices on top of brown sugar. Sprinkle on rhubarb between strawberry slices.

  1. Beat eggs until thick and lemon colored. Gradually beat in sugar.
  2. Add juice and vanilla.
  3. In a separate bowl combine flour, baking powder and salt.
  4. Add dry ingredients into wet mixture.
  5. Pour batter into pan and bake at 350 for about 45 minutes or until an inserted toothpick comes out clean.
  6. Cool pan on a rack for 3 to 4 minutes then flip onto serving dish.
  7. Do not remove pan for 10 minutes so glaze drips down and covers cake.
  8. Remove pan and enjoy!

To celebrate Chocolate Peanut Butter Day, I chose to make candy and cookies rolled into one. Literally!

These candies have bits of cookies rolled right inside. I used my own chocolate cookies to crumble but store bought work fine. If you want my cookie recipe you can find it here but leave out the chocolate chips.
Best thing its only a few ingredients!
These little candies are as much fun to make as they are to eat!

Crunchy Chocolate Peanut Butter Balls

Ingredients
  • ⅓ cup sweetened condensed milk
  • ¼ cup chunky peanut butter
  • 3 cups powdered sugar, divided
  • ½ teaspoon vanilla
  • ½ cup crushed chocolate cookies
  • 1 Tablespoon cocoa
  • ¼ cup whole peanuts
Instructions
  1. Mix together ½ cup powdered sugar and cocoa, set aside.
  2. Mix together milk, peanut butter and vanilla.
  3. Gradually stir in 2½ cups of the powdered sugar. Coat your hands with powdered sugar and knead dough until it reaches the desired consistency. Your dough should be firm by not crumbly. Add more sugar or milk if needed. add cookie bits. Dough will be sticky. Form dough into balls and place on parchment paper. Refrigerate for at least an hour until firm enough to handle.
  4. When dough is set eat as is or roll in cocoa mixture. Tap off excess.
  5. Press a whole peanut on top if desired.
Notes
I used my own homemade chocolate cookies for crumbs but you can substitute store purchased cookies to crumble.
