Strawberry season is coming to a close but that doesn’t mean you need to give up enjoying Florida Strawberries!

There is still plenty of time to buy and preserve those little tasty red gems! Florida Strawberry season runs from December to April. The unique growing conditions during the Florida winter results in the sweetest, juiciest strawberries.

Florida Strawberry Growers take extra care to ensure their crop doesn’t freeze. A light spray of water over the fields adds a layer of protection just before the temperatures dip!

Because of their dedication, we were able to buy fresh from Florida, Florida Strawberries all season at  Weis Markets !

We can take measures to keep those strawberries around even longer. Florida Strawberries can be canned, dried, frozen whole or puréed, even pickled.

One of my favorite ways to preserve Florida Strawberries is to make Freezer Strawberry Jam.
It’s so easy and only uses 4 ingredients!

Once you have the jam made you can use it on your favorite toast. It makes a great PB&J too! Add a little to sauces or glazes for extra strawberry goodness.

I like to bake with it. These Strawberry Lemonade Blondies use a cookie base with a touch of lemon extract and gobs of strawberry jam swirled in. So good, you won’t miss the chocolate.

Strawberry Lemonade Blondies

Strawberry Lemonade Blondies

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 16 blondies

Strawberry Lemonade Blondies

Ingredients

    Freezer Jam
  • 4 cups fresh Florida Strawberries, hulled and crushed (should equal 2 cups crushed)
  • 4 cups sugar
  • 1 pack fruit pectin (1.75 ounces)
  • 3/4 cup water
  • blondies
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted plus 2 tablespoons to grease foil
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 teaspoon lemon extract
  • 2 to 3 tablespoons Strawberry Freezer Jam

Instructions

    Jam
  • Stir together crushed Florida Strawberries and sugar. Let mixture stand for about 10 minutes for sugar to absorb liquid. Stir occasionally.
  • Bring pectin and water to a boil, stirring constantly. Boil for 1 minute.
  • Add pectin to strawberry mixture. Stir well for several minutes to dissolve sugar. Portion into sterile containers. Fill to 1/2 inch from the top to allow room for expansion in freezer. Cover with lids.
  • Allow containers to set out at room temperature for 24 hours or until set. Makes about 5 cups of jam.
  • Refrigerate or freeze.

  • Line an 8x8-inch baking pan with foil. Allow a few inches to hang off the ends. Brush foil with melted butter or shortening. Set aside.
  • Mix together flour, baking powder and salt.
  • In a separate bowl, cream together butter and sugars. Add egg and lemon. Add to dry mixture.
  • Spread dough evenly over bottom of the pan. Dot with jam. Use a knife to swirl into dough.
  • Bake at 350 for about 30 minutes until an inserted toothpick comes out clean.
  • Allow pan to cool about 10 to 15 minutes before removing blondies with foil intact. Lift foil by overlap "handles" and set on rack to finish cooling.
  • Cut cooled blondies into desired sizes.
