I love trying new ways to incorporate Florida Strawberries into my meals.
Chicken and strawberries go wonderfully together. Basil and strawberries as well as cheese and strawberries complement each other in flavor profiles.
Strawberries tame the wild mint quality of basil and balance the saltiness of cheese with a kiss of sweetness.
So a Strawberry Pesto Chicken dinner is a delicious idea. I know you’ll agree.
Combine Florida strawberries, basil and garlic in a food processor until blended.
Add cheese, salt and pepper. Process into a loose paste.
Place 1 teaspoon of olive oil in a baking dish. Add chicken. Top with 1/4 cup of pesto.
Cover and bake at 350 for 10 minutes. Uncover and finish baking until temperature reaches 165 degrees.
Heat remaining pesto in the microwave for 20 seconds. Pour over chicken and serve.
Ingredients
- 1 pound boneless chicken breasts
- 1 cup Florida strawberries, chopped
- 1 cup fresh basil leaves
- 1 clove garlic, minced
- 2 tablespoons grated Parmesan cheese
- 2 teaspoons olive oil, divided
- salt and pepper to taste
Instructions
- Combine Florida strawberries, basil and garlic in a food processor until blended. Add cheese, salt and pepper. Process into a loose paste.
- With motor running, slowly drizzle in olive oil. Continue blending for about 30 seconds to emulsify the pesto.
- Place 1 teaspoon of olive oil in a baking dish. Add chicken. Top with 1/4 cup of pesto. Cover and bake at 350 for 10 minutes. Uncover and finish baking until temperature reaches 165 degrees.
- Plate and slice chicken on a bias.
- Heat remaining pesto in the microwave for 20 seconds. Pour over chicken and serve.
