Chicken Nuggets made in my Hamilton Beach Proctor Silex Air Fryer serve juicy, tender chicken pieces made with less oil, no egg or breadcrumbs. Perfect for #Back2School lunch, snack or dinner!
1 pound (1 1/2-inch cut pieces) chicken breast
1/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
Whisk together flour, cornstarch, salt and pepper in a small bowl.
Dredge chicken pieces in flour mixture. Gently shake off excess. Lightly spray both sides of  coated chicken with vegetable oil.
Place chicken pieces on a singular layer into fryer basket. Do not overcrowd. Cook in 2 separate rounds if necessary.
Set air fryer to 400 degrees for 20 minutes. Turn chicken pieces over with a tongs after about 10 minutes cook time to brown both sides. Continue cooking until chicken is browned and reaches internal temperature of 165 degrees. Allow extra cook time in 5 minute intervals if necessary.
Serve alone or with a dipping sauce.
