Lebkuchen-Spiced Molasses Cookies
Buckwheat honey gives these cookies a molasses flavor. The oil in the nut flours add a bit of moisture, keeping the cookie soft and chewy.
Ingredients
- 1 1/2 cups flour
- 3/4 cup hazelnut flour
- 1/4 cup plus 2 tablespoons almond flour
- 1/2 teaspoon cocoa
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cardamom
- 1/4 teaspoon ground cloves
- 1/8 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/2 cup brown sugar
- 1/2 cup buckwheat honey
- 2 tablespoons butter
- 1 egg
- 1/2 cup dried candied fruit
- powdered sugar for dusting
Instructions
- Whisk together flours, cocoa, baking powder, baking soda, salt and spices. Set aside.
- Cream together butter and brown sugar. Add honey and egg. Add fruit.
- Stir in dry ingredients.
- Wrap dough in wax paper and roll to 1/2-inch thickness. Chill for at least one hour.
- Unwrap dough and cut into 2-inch cookies. Bake at 350 for approximately 20 minutes until set and golden brown.
- Cool on rack and dust cooled cookies with powdered sugar.
